Mexican Meatloaf with Salsa
This recipe is really easy to make; it’s quick, too. All you’ve got to do is soften the ground beef, brown it, and then add the other ingredients. It’s a very quick recipe so you can put the meatloaf in the oven before you leave for work, and it’ll be ready when you get home.
I grew up in the Midwest, and like many kids of my generation I had the traditional American standard of a hamburger with fries. I usually ate it with a side salad and a small Greek yogurt for dessert. When I moved to the Southwest I discovered how much better Mexican food is, and I started experimenting with it.
If you’ve been on the lookout for a Mexican-style meatloaf recipe that doesn’t include corn, you’ve come to the right place. Not only is this one of the easiest meatloafs to make, but it’s also the most delicious. Using ground beef or pork mixed with beans, chilies, and cumin, this meatloaf is packed with flavor and ready in just a few hours.

Ground beef, cilantro, and salsa mix with flavorful green chiles, melty cheese, and our distinctive taco seasoning for a dinner you won’t want to miss! Make it, bake it, and get out of the house!
Every week, we are pretty much the same folks that have Taco Tuesday. My children asked that we alter things up but keep the Hispanic theme. (Chips and queso are a favorite!) My spouse wanted something heartier yet lower in carbohydrates (no tortillas). This dish is easy to make and full of flavor and protein. Both the kids and the husband were on board, and we all had a great time switching up our Tuesday dinner arrangements!
Is it possible to use a different kind of ground meat?
Yes, you can! We use ground beef with an 80/20 ratio in this recipe. This fat ratio helps the meatloaf maintain its form and retain moisture. Ground turkey, ground pig, or ground chicken may all be used. Because the taco seasoning is the most prominent taste in the meat, a meat replacement should not have a significant impact on the flavor.
Should I use a leaner cut of beef than the recipe suggests?
You certainly can, but we don’t advise it! Because the beef is fattier, the meatloaf retains moisture and is soft. If you choose lean meat, the meatloaf will most likely be rough and dried out. If you choose a leaner cut of meat, we suggest covering it with foil and removing it for the final 10 minutes of baking.
Is it necessary to cover the meatloaf during baking?
Depending on the recipe, you may or may not need to cover the meatloaf during cooking. You won’t need it for our recipe. Our meatloaf stays juicy and evenly baked thanks to the beef we used and the salsa we put on top. If you’re using lean meat, cover it to prevent it from drying out.
The following are the ingredients for our Mexican Meatloaf with Salsa:
- Beef Grain
- Green Chiles in a Can
- Cheese that has been shredded
- Salsa
- Seasoning for tacos
- Eggs
- Ranch dressing, lettuce, cilantro, avocado, and tomatoes are all optional garnishes.
To prepare our Mexican Meatloaf with Salsa, follow these steps:
Preheat the oven to 375 degrees Fahrenheit. Combine the ground beef, egg, and taco seasonings in a large mixing basin. I really do this with my hands since it’s so much easier!
After that, cut a big rectangular piece of waxed paper and lay it flat. Press the ground beef mixture into an even rectangle on top of the parchment paper.
Half of the cheese and the green chili peppers from the can are sprinkled on top.
Slowly roll the waxed paper into a loaf shape with the meatloaf in the center. In a bread pan, place the loaf.
Pour the salsa evenly over the top. Preheat oven to 375°F and bake for 50-55 minutes, or until done. Top with the remaining half of the cheese and bake for another 10 minutes, or until the cheese is melted and bubbling.
Serve and have fun!
Until today, I’ve never been a big lover of meatloaf. I particularly like it with fresh avocado on top and a sprinkle of Jalapeo Ranch on top! Everything comes together well and tastes fantastic! Tuesday is no longer Taco-Tuesday… Monday will be Meatloaf Monday!

Ingredients
- 2 pound beef (ground)
- 2 eggs
- 1 can of green chiles (4 ounce)
- Salsa (about 3/4 cup)
- 2 garlic cloves, minced
- Taco Seasoning, 2 tblsp.
- 2 cups of shredded cheese
Instructions

- Preheat the oven to 375 degrees Fahrenheit.
- Combine the ground beef, eggs, garlic, and taco seasoning in a large mixing basin.
- Place the meat mixture in the center of a sheet of wax paper and fold it into a rectangle.
- Half of the cheese and the can of green chilies are sprinkled on top.
- Roll the meat into a loaf slowly (like pictured). Carefully raise the bread and put it in a loaf pan.
- Bake for 50 minutes after spreading salsa evenly on top.
- Remove from oven, top with remaining cheese, and bake for another 8-10 minutes, or until cheese is melted.
- Remove from the oven and top with your favorite toppings! Cilantro, ranch, avocado, and chopped tomatoes are some of our favorites.
