  • 1 quart of water
  • 1 quart of white wine
  • 3 big carrots, peeled and diced into 1 inch cubes
  • 3 quartered leeks
  • 1 celery stalk, sliced into 1 inch slices
  • 12 cubes of delicious red pepper, cut into inch cubes
  • 1 halved white onion
  • 4 peeled garlic cloves
  • 8-10 ripe medium-size tomatoes, peeled after roasting
  • 3 peeled garlic cloves

  • 6 guajillo peppers, seeds and softened in hot water The kind of chilli peppers used and the quantity utilized will determine how hot the dish is.
  • 13 cup extra virgin olive oil
  • Squid, 1 pound
  • 1 lb. shrimp
  • 1 pound boneless fish fillets cut into 1 inch cubes (grouper, snapper, halibut, catfish, sea bass, or similar)
  • octopus, 1 pound
  • 10 clams that have been cleaned
  • 2 to 3 big fresh epazote sprigs (or a handful of fresh cilantro or parsley sprigs, if no epazote is at hand)

  • 1 teaspoon freshly ground black pepper
  • 2 bouillon cubes (chicken)
  1. Bring the 8 ingredients for the broth to a boil in a large saucepan.
  2. To create the sauce, mix the tomatoes, garlic, onion, and guajillo pepper together in a blender. This mixture should be strained and fried in olive oil.
  3. In a separate bowl, combine the fried tomato sauce and the broth.
  4. Simmer over medium heat, partially covered, until the veggies are soft.
  5. Increase the heat to medium-high and add the fish cubes.
  6. When the stock comes back to a moderate boil, add the other seafood ingredients: squid, shrimp, octopus, and clams, and simmer for 3 minutes.
  7. Before turning off the heat, add the 4 ingredients for taste, fragrance, and seasoning and simmer for 1 minute.
  8. For a more effective presentation Remove the bay leaves, halved onion, and 4 garlic cloves.
  9. Serve.
