Sauce made with hot oil
- cayenne pepper, 1/4 cup
- brown sugar (two teaspoons)
- 1 tablespoon powdered garlic
- 1 tablespoon paprika (smoked) (regular is fine)
- 1 tablespoon chili powder (chipotle) (regular is fine)
- 1 teaspoon crushed red pepper
- frying oil made from vegetables
Instructions
- To make the chicken, whisk together the spicy sauce, buttermilk, salt, pepper, and paprika in a large mixing bowl until thoroughly mixed.
- Add the chicken to the marinade and make sure it’s well coated. Refrigerate for up to 4 hours or overnight if desired.
- Whisk together all of the flour dredge ingredients in a large mixing basin until thoroughly mixed.
- Remove the chicken pieces from the buttermilk mixture one at a time, allowing any excess to drip off.
- Place the chicken pieces in the flour mixture and coat well; repeat with the remaining pieces. Shake off any excess flour, then dip into the buttermilk, then back into the flour mixture, and place on a plate or a rack on a baking sheet.
- Fill a deep fryer with oil or heat a big cast-iron pan to approximately 325 degrees.
- Slowly add 3–4 chicken pieces at a time and fry for 12–15 minutes, or until golden brown and crisp on both sides and the internal temperature reaches 160–165 degrees.
- Place the fried chicken pieces on a rack-covered baking sheet in a 250-degree oven while you finish frying the other pieces.
- When all of the chicken pieces have been fried, combine 1 cup of the heated frying oil with the oil ingredients in a medium mixing bowl, stirring well to incorporate.
- Finally, spread the sauce over the cooked chicken and serve immediately.
