Here is one of my favorite recipes for an easy and delicious weeknight dinner. The combination of flavors in this frittata is amazing and makes this dish perfect for brunch, or as a tasty dinner. Ingredients: 6 large eggs, beaten 1 c half and half cream 1/2 c shredded mozzarella cheese 1 medium onion, diced 2 tbsp butter, melted 3 large cherry tomatoes, halved 1 tbsp capers Sea salt and pepper, to taste Directions: Preheat oven to 400 degrees.
