This meal may be made with any protein; I used pork tenderloin, but chicken, beef, shrimp, or mixed seafood would all be delicious! Pad Prik Khing is traditionally prepared using Chinese long beans, but because they are more difficult to come by, I just cut fresh green beans into an inch-thick slice. I also included thinly sliced makrut lime leaves, but if you don’t have any, you may leave them out. In my backyard, I have a large tree that my mother gave me. The primary ingredient, red curry paste, is what makes this meal so simple. I use Mae Ploy Red Curry Paste, which can be purchased here. Some recipes ask for the addition of sugar and fish sauce; I suggest tasting it first and then seasoning to taste. I added approximately a teaspoon of fish sauce, although the curry paste already contains fish sauce. If you want the meal to have some sauce, add approximately a quarter cup of water towards the end. This recipe is simple to prepare and is ideal for a weekday dinner. Instructions 

  • 1 tablespoon oil and red curry paste in a wok over medium heat. Stir for a minute, or until the mixture is aromatic. Cook until the meat is fully cooked.

  • Taste for saltiness/sweetness after adding the green beans. You may season with fish sauce and/or sugar to taste. Add a 14 cup of water if you want more sauce. Allow green beans to simmer for approximately a minute after stirring thoroughly.

  • Serve with Thai jasmine rice and a fried egg on top, garnished with kaffir lime leaves.
