Instant Pot Beef and Sweet Potato Chili |

I love chili. I think it’s one of the best foods to eat on a cold winter day. And, in my opinion, chili is one of the best meals to make in an Instant Pot.

I’m a little late in posting this recipe but it was amazing!! I was a little skeptical about the beef and sweet potato chili because I thought it might be too heavy. Since it’s so tasty I’m posting it anyway. It’s a perfect dish for cold winter nights.

It’s chili season and I have been on a quest to find the perfect chili recipe. I decided to try this recipe out based on one of my favorite bloggers, Shelbie from smittenkitchen.com. With ground beef, three beans, and sweet potato, this rich and creamy chili is prepared in the Instant Pot.

I intended to prepare a beef chili with sweet potatoes, but my kid won’t eat them if she sees them, so I came up with this recipe. I opted to mash the chili after it was done, and the result was a rich and creamy chili.

When I’m ‘hiding’ a veggie and my kids see me cooking, I inform them. My kid doesn’t dislike the veggie when it’s mashed; she simply won’t try it whole. Make decisions based on what is best for your family.

The thickening effect of the mashed sweet potato in the chili is one of my favorites. The leftovers were excellent for hot dogs the following day.

What You’ll Require

Beef Bouillon, Ground Beef, Canned Beans, Tomato Sauce, Diced Sweet Potato, and Chili Seasoning

This Beef and Sweet Potato Chili has basic ingredients and is made entirely in the Instant Pot. Less mess with only one pot!

I haven’t tried this dish in a slow cooker or on the stovetop, so I can’t provide you directions for those techniques, but you should be able to adapt it to either.

I also skipped the chopped onions and garlic in this recipe since I knew my kid would pick them out. With the chili spice mix, the taste was still fantastic.

Substitutions

Ground beef may be replaced with ground turkey, chicken, or a plant-based ground to make it vegetarian.

Sweet Potato- While sweet potatoes aren’t very flavorful, you may use white potatoes, butternut squash, or pumpkin puree instead, like I do in my Turkey Pumpkin Chili.

Beans- I used a 3 Bean Blend with Pinto, Black, and Kidney beans for the canned beans. For this dish, feel free to use whatever kind of bean you want.

Trader Joe’s Chili Spice Mix- I used 2 tablespoons of Trader Joe’s chili spice blend. To put it to your own use: 2 tblsp chili powder, 1 tblsp cumin, 1 tblsp onion powder, and 1 tblsp garlic powder

How to Serve and Store Beef and Sweet Potato Chili

Chili is best served with a variety of toppings and corn chips.

Shredded Mexican cheese mix with a dollop of Greek yogurt is a favorite of my kids.

Dairy-free cheese, spicy sauce, pickled jalapenos, sliced avocado, and green onions are what my husband and I go for.

For a lighter alternative, serve this Beef and Sweet Potato Chili over rice, egg noodles, or over top of mixed greens.

The chili may be kept in the refrigerator for a few days or frozen in an airtight container or bag. Frozen chili may be reheated in a saucepan on the stove after being thawed overnight in the fridge.

I enjoy having a freezer full of frozen foods on hand for quick dinners!

Chili with Beef and Sweet Potatoes in the Instant Pot

Instructions 

  • Set the Instant Pot to Saute and wait a minute for it to heat up. Cook until the ground beef is browned in oil. Add the chili spice and beef bouillon, or use 1 teaspoon of salt instead.

  • 1 cup water, both cans of drained beans, tomato sauce, chopped sweet potatoes Place the lid on the pot, lock it, and set the valve to seal. Set the timer for 25 minutes on high.

  • Once the timer goes off, I like to let the pressure naturally drop for 10 minutes, but you may also quickly relieve the pressure by moving the valve over with a kitchen tool. Just be cautious with the steam.

  • Remove the cover once the valve has lowered and gently mash the chili with a potato masher until the sweet potato is absorbed.

  • Serve with shredded cheese, green onions, spicy sauce, avocado, and chips, among other toppings.

 

This chili is one of the easiest, tastiest ways to cook up some beef, and it’s always a hit during the cold winter months.
