    • 1 1/2 pound boneless, skinless chicken thighs, cubed
    • 1 medium yellow onion, peeled and sliced into 1″ chunks
    • 2 bell peppers, sliced into 1″ chunks, any color
    • 1 tablespoon of canola oil
    • a quarter cup of pineapple juice
    • 1 1/2 cups fresh or canned pineapple pieces
    • season with salt and pepper to taste


    • 2 tsp cornstarch (or flour) plus 1 tbsp water
    • 1 tbsp sugar (brown)
    • 1 tsp white balsamic vinegar
    • 1 teaspoon low-sodium soy sauce
    • 1 tablespoon hoisin sauce


  • white rice, cooked (optional)


  1. Whisk together all of the sauce ingredients in a medium bowl, including hoisin sauce, vinegar, soy sauce, sugar, and cornstarch. Remove from the equation.
  2. Set aside the chicken after seasoning it with salt and pepper.
  3. In a large skillet, heat the oil over medium-high heat. Add the chicken to the skillet once the oil is heated.
  4. 2 minutes each side, sauté the chicken until lightly browned.
  5. Sauté the bell peppers, onion, and pineapple pieces until they’re crisp and tender.
  6. Bring the sauce mixture to a boil, then continue to whisk until all of the chicken pieces are thoroughly covered.
  7. Remove the chicken and rice from the heat and serve inside a hollowed-out pineapple or over plain rice.
