Squash Spaghetti with Sausage and Parmesan

Squash is often cooked in the microwave or in the oven. Although microwaving the squash saves time, we believe that roasting or baking it in the oven brings out more squash flavor. Both remain delectable. The recipe calls for roasting, but there is a note at the bottom with microwave directions. If you want to make this vegetarian, there are many excellent plant-based “meat sausages” available today in grocers, or you can replace the squash with cherry tomatoes, mushrooms, or whatever vegetables you want.

  • 1 (1 ) Squash Spaghetti (about 3 pounds-1.36kg)
  • 2 tblsp (30 ml) extra virgin olive oil, split
  • 1/2 medium (1/2 medium) chopped onion
  • 3 garlic cloves (3 garlic cloves), minced or crushed
  • 1 pound (454 g) Italian Sausage, uncooked
  • 1 teaspoon (15 mL) chopped fresh basil (or 1 teaspoon dried basil) – or your favorite herb, such as oregano, rosemary, etc.
  • 1 cup (100 g) grated Parmesan cheese, ideally freshly grated *See Note 2 below recipe for more information.

  • Preheat the oven to 375 degrees Fahrenheit/190 degrees Celsius.

  • Squash should be cut in half. (You have the option of cutting lengthwise or across.) Both methods work well, although crosswise will result in longer strands. Kitchen tip: To begin the cut, puncture the squash with the point of the knife. You don’t have to cut everything in half after you’ve begun; simply cut through the rind, working your way around the circumference.) Remove the seeds and loose crumbs using a spoon.

  • 1 Tablespoon olive oil, lightly oiled on the cut edge of the spaghetti squash Place on a baking sheet pan or a big baking dish, cut side down.

  • Bake for 45-55 minutes, or until the squash flesh readily separates into strands when pierced with a fork. (You want the “spaghetti” strands to split from one another without becoming mushy by overcooking.) Taste one strand of squash after 45 minutes to check whether it is cooked to your liking. Depending on the size and softness of the squash, bake for additional 5-15 minutes if necessary.

  • To continue gently freeing the “spaghetti” from the shells, use a fork to finish gently loosening the “spaghetti” from the shells and put aside.

  • Pinch the sausage and roll it into 1/2-inch balls. Remove from the equation.

  • Over medium heat, heat a large skillet. In the same pan, heat the remaining 1 tablespoon of olive oil, then add the onion and garlic. Cook for 1 minute until tender, then add sausage. Allow to simmer without stirring until the bottom side of the sausage begins to brown. Cook, turning periodically, until the sausage is cooked through (about 2-3 minutes depending on heat and sausage size).

  • Stir in the basil, and then toss in the spaghetti squash strands. Cook until the spaghetti squash is well heated (usually less than a minute.)

  • Remove the pan from the heat. Add the parmesan cheese and mix well. To taste, season with salt and pepper. Optional garnishes include parsley and/or red chili flakes. Serve right away.

Cooking the spaghetti squash in the microwave (Note 1): Half the spaghetti squash and remove the seeds. Place cut side down in a microwave-safe dish with a 1-inch layer of water.
