Instant Pot or Slow Cooker White Chicken Chili

White Chicken Chili is a simple, hearty chili that can be prepared in the instant pot or on the stovetop. Serve with tortilla chips or cornbread, then top with your favorite toppings.

Time to prepare: 5 minutes

Time to cook: 25 minutes

Instructions 

Using an Instant Pot:

  • Place all ingredients in Instant Pot, secure cover, set valve to sealing, cook on high pressure for 25 minutes, then turn off and let pressure relax naturally for 10 minutes. Then open the release valve to let the air out. Remove the cover, shred the chicken breast, return it to the saucepan, stir, and season to taste. Serve with toppings while still hot.

Using the Slow Cooker

  • In the Slow Cooker, combine all ingredients in the order listed.

  • Cook for 6-8 hours on low or 4 hours on high.

  • Serve hot with toppings after shredding chicken with a fork and stirring to mix. Taste for seasoning.

Notes

This chili keeps nicely in the freezer. Place in freezer bags or containers after they have cooled. Allow to defrost overnight in the refrigerator before serving.
