  • 1 quart of water
  • a quarter cup of sugar
  • 1 teaspoon vanilla extract
  • Honey, 3 tbsp
  • Cinnamon, 1 tsp
  • 4 pears that are firm to the touch
  • 12 GALLON HEAVY CREAM
  • 1 tablespoon honey
  • a sprinkle of salt, to taste

 

Instructions

 

 

  • In a large saucepan, bring the wine, water, sugar, vanilla, honey, and cinnamon to a boil.

  • Leave the stems on the pears while peeling them.

  • Arrange the pears in the liquid so that they are completely covered. Reduce to a low heat and cook for 30 minutes, or until the pears are softened. Remove the pears and put them upright in a plate. Pears should be chilled in the refrigerator.

  • Bring the poaching liquid to a boil, then reduce to a syrupy consistency, approximately 5-7 minutes. Remove from the heat and set aside to cool.

  • In a mixing dish, combine heavy cream, honey, and salt. Whip together with an electric mixer until firm peaks form, approximately 2 minutes.

  • Serve the pears with salted whipped cream and a sprinkle of the poaching liquid. Enjoy!
