A simple low carb chicken salad recipe, with a nice little twist at the end. This salad is great for lunch on the go, or as a grab and go lunch. You could even use it for a tailgate party, or even a pot luck.
It’s not easy finding a good low carb chicken salad recipe that tastes good, is quick and easy to make, and doesn’t contain any weird ingredients.

Today I’m going to show you how to make a tasty low-carb lunch that packs a lot of protein, fiber, and healthy fat to keep you full and satisfied all afternoon.
This Low-Carb Salad with Chicken is an homage to my previous non-keto self. My best chicken salad in college came from a sushi restaurant that also had a deli counter. The addition of grapes, pecans, and the right mayo-to-chicken ratio elevated this chicken salad to new heights. The chicken wasn’t too large, but it wasn’t shredded like other restaurants (wrong).

Chicken salad is my go-to dish at every restaurant that offers it, from Wawa to your local deli. I’ve done my fair share of experimenting.
The addition of sour cream is what sets this chicken salad apart (in all the nicest ways imaginable). Yes, sour cream is creamy, smooth, and flavorful. If you haven’t tried it yet, I strongly advise you to do so! Maybe not everything, but it elevates this chicken salad to new heights of delectability.

What Goes Into Making An Easy Chicken Salad?
Making chicken salad is as simple as you want it to be! You may use canned chicken, get a full roast chicken from the grocery’s hot department, boil a chicken in water in the microwave or on the stove, or sear it in a skillet with coconut oil/ghee.
It all depends on how much time you have and how patient you are. Personally, I would choose whichever path you think is best. I pan fried the chicken thighs for this dish since I prefer my chicken crispy, but you could instead boil it in boiling water. However, it’s what you put in the chicken that makes it all come together!

Instructions:

1. Chop the chicken into bite-size pieces. In a medium heat pan, add 1 tbsp coconut oil and the chicken. Cook until everything is done.

2. Place the chicken thighs in a microwave-safe dish and cover with water. Cook for 6-8 minutes, or until chicken is well cooked. Cut up into small pieces.
Chicken Salad

In a mixing bowl, combine all of the ingredients above, except the pecans and cooked chicken.

Toss in the chicken after everything is well mixed. Toss in the pecans one more.

Refrigerate and serve chilled!
