A staple of Chinese and Thai cuisine, peanut chicken lettuce wraps are a delicious, low-carb alternative to traditional lettuce wraps. The filling is basically a peanut butter-flavored stir-fry of chicken and vegetables, then topped with chopped lettuce, chopped peanuts, and a couple of slices of lime. The combination of the crunchy lettuce, creamy peanut butter, and spicy sauce make this one of the tastiest and healthiest lettuce wrap recipes you’ll ever find.

Since going keto, chicken lettuce wraps have become one of my favorite meals. Before adopting the keto diet, I had no clue how versatile lettuce might be as a vehicle for meats, vegetables, and sauces. You’re not losing out on anything if you don’t have the bun or bread.

Lunch Wraps with Low Carbs!

Matt and I prefer to make our first meals (typically a late breakfast or lunch) our carbiest meals of the day, and this lettuce wrap will accomplish just that.

It’s not very high in carbohydrates, but it can contain a lot of vegetables and avocado, and the peanut chicken, marinated in peanut butter, adds a few carbs as well! Because of their high fiber content, we prefer to obtain most, if not all, of our carbohydrates from vegetables.

I adore lettuce wraps because I can stuff them with anything I want or find in the fridge! I may keep it basic with just meat and cheese, or I can get a bit more creative, like we did with our Peanut Chicken Wrap.
