Keto Waffles with Blueberry Butter
Good morning, and welcome to another week of my weekly low carb waffle recipe round up! It’s been a while since I last posted a recipe, and this week I’m sharing a couple of new keto waffle ideas. I decided to try out the keto diet, and it was pretty easy to do. I made a few tweaks to the basic recipe, and the result was perfect. Definitely a good way to kick-start a ketogenic diet, or if you’re trying to lose some weight.

Blueberry butter on keto waffles
Waffle aficionados, unite! Is there a better keto breakfast you can think of? These fluffy keto waffles are topped with a creamy blueberry butter and a delightful crunchy crust. Because these keto waffles are already gluten-free, making them dairy-free is simple when you replace the butter with coconut oil.

Instructions

Combine melted butter and eggs in a mixing bowl. Using an electric hand mixer, combine the other ingredients into a homogeneous batter.

Allow for 5 minutes of resting time while the waffle iron warms up to medium.

After the iron has been preheated, pour the batter into it and bake until brown. The baking time is determined by the size of your waffle iron; we used a 34 cup (112 dl) batter in ours. Continue with the remaining batter.

With an electric hand mixer, combine the butter and blueberries, then serve with waffles.
Tip!
You don’t have time to make blueberry butter? Then top the waffles with butter and cinnamon, or a dab of whipped cream and fresh berries.
If the waffles are a little eggy at first, set them aside to cool, then reheat them in a toaster, skillet, air fryer, or oven rack. Waffles and pancakes made with keto and low-carb ingredients can develop a distinct flavor or texture over time.
Toppings for keto butter waffles
Allow our blueberry butter to entice you to experiment with different flavored butters. To make a fresh-tasting keto butter, combine citrus zest with a tablespoon of fresh juice. These waffles would be fantastic with lemon, lime, or orange juice.
Keto without dairy?
In the batter, replace the butter with coconut oil.
