Smoked Sausage Quiche Cups
You’ve seen them all over the Internet — sausage quiche, that is. Puffed pastry crust, cheddar cheese, eggs, and bacon, this dish is a perfect breakfast, if you ask me. There’s nothing wrong with making a quiche and it’s relatively easy to do, but there are a few things you’ll need to keep in mind in order to make the most of your quiche recipe.
Now that we’re used to easy recipes like pizza and lasagna, we can start experimenting with other dishes as well. This smoked sausage quiche recipe is one of our favorites because the flavors of the sausage, eggs, and cheese blend together really well to make a hearty, tasty breakfast.

I used one roll of chilled pie crust for the quiche cups and the other for piggies in a blanket with Hillshire Farm® Tajin® Chili Lime Lit’l Smokies® Smoked Sausage. The quiche cups and piggies in a blanket were both delicious for brunch on the weekend, and the leftovers were great for grab-and-go breakfast during the week.

Unroll the pie crust and cut 3-inch circles out of it with a glass or biscuit cutter. By shaping the pieces into a ball, rolling it out with a rolling pin, and cutting more circles, I was able to obtain all 12 circles. Using your fingers, press the rounds into the muffin tray.
Then, add diced Hillshire Farm® Tajin® Chili Lime Smoked Sausage, diced bell pepper, and green onions to the tins.
6 eggs scrambled and poured into muffin tins. You may either add shredded cheese or leave it out, like I did.
Bake for 20 minutes, or until the egg is fully set in the quiche cups. Allow to cool in the muffin pan for a few minutes before removing.
Serve Quiche Cups with Smoked Sausage as follows:
The quiche cups are ideal for individual servings and may be made in bulk to serve a crowd. They reheat nicely in the microwave and may be kept in the fridge/freezer for a substantial grab-and-go breakfast.
Serve the quiche cups alone or with a garnish of cilantro or avocado slices.

We’re creating piggies in a blanket with the second pie crust and Hillshire Farm® Tajin® Chili Lime Lit’l Smokies® Smoked Sausage. The chile lime taste in these piggies in a blanket is great for parties or breakfast.
To begin, cut the pie dough into about 40 pieces. To create the strips, I used a pizza cutter. Wrap a pie crust over each Lit’l Smokie and put seam side down on a baking sheet.
Bake for 15 minutes at 350 degrees, then put on the broiler for a few minutes until the crust is lightly browned. These piggies on a blanket are ideal for a breakfast with the family or a party. They’re delicious with a side of eggs or the sausage quiche cups.

Remove the refrigerated pie crust from the box and set aside for 15-20 minutes to come to room temperature. Preheat the oven to 375°F and coat a muffin pan with cooking oil spray.
