These tostadas are perfect for taco Tuesday, or any day. They are full of Mexican flavor and deliciousness, and one thing you will love about them is how easy they are to make. You will be making this recipe for a long time to come!
It doesn’t get much more high-maintenance than a rotisserie chicken. It’s a highly sensitive bird that has to be properly prepared to result in a hot, juicy and tender product ready for consumption.
Paired with a side of our homemade brown rice, these tomato-based chicken tortillas provide a hearty, satisfying meal. (Pair with a side of our homemade cilantro rice if you want to keep things vegetarian.) We recommend substituting store-bought rotisserie chicken, but it’s fairly easy to make your own. Just heat the breasts in a skillet over medium heat, flipping them frequently until they’re browned all over. Finish the chicken in the oven for about 15 minutes. It’s not the tastiest thing in the world, but the carbs will keep you full and the flavor is sure to please. And if you’re not eating them right away, you can save the chicken. When you’re short on time, grab a rotisserie chicken and a few additional ingredients from the grocery store, and these chicken tostadas are ready in 15 minutes!
How to Make Tostadas using Rotisserie Chicken
Baked, fried, or store-bought tostadas are all options. The baked version is my favorite, and you can prepare a large amount at once in the oven.
Simply brush corn tortillas with oil, put them directly on oven racks, and bake for approximately 10 minutes, or until crispy.
On the tostada, put a layer of refried beans. Of course, canned beans are the most convenient, but I had frozen a pot of homemade beans that I just cooked and blended until smooth.
You’ll shred all of the flesh from your rotisserie chicken now. Alternatively, if you have leftover chicken from a previous dinner, go ahead and use it. My two-ingredient Salsa Chicken is also a wonderful alternative.
Here’s where you can get creative with your toppings. Lettuce, tomato, Mexican crema, and jalapenos were the ingredients I used.
For my kids, I’ve topped these chicken tostadas with chunky salsa or shredded cheese. Alternatively, set up a toppings station and let everyone pick what goes on their tostada. It’s a stress-free, enjoyable dinner!
