French Toast Casserole with Cinnamon Pecan Topping |

As the weather warms up and our minds begin to wander, we often think about the summer season and all the fun activities that can be had on a warm day. That is why I have put together an easy to prepare French toast casserole for you this summer.

I don’t mean to brag, but I’ve made a great French toast casserole. I’ve been working on it for weeks, and I think it is a perfect replacement for those mornings when I’m too lazy to cook. It has a wonderful golden color, a crunchy pecan topping, and a sweet cinnamon flavor.

The French toast casserole has to be one of the easiest, most delicious, and most versatile recipes you’ll ever be able to make for breakfast. That’s because it really only needs two ingredients, and those two ingredients are eggs and bread. The bread can be any kind of bread you want, really. I’ve used white and wheat breads with great results, but feel free to experiment with the ratio of bread to egg.

Christmas morning with children is both wonderful and chaotic! There’s a lot of joy and excitement, which I like! I’ve always prepared a breakfast that I can throw together quickly or prepare the night before for the last several years.

This French toast casserole is a hit with my family, and the best part is that I can prepare it early in the morning or overnight and still have time to eat it with them. It’s a lot less work than flipping French toast over the burner.

The only difficult part is carrying the goods inside, which, let’s face it, isn’t that terrible.

What you’ll need to create French Toast Casserole, as well as several alternatives.

Eggs, Almond Milk, Coconut Sugar, Cinnamon, Pecans, and Coconut Oil, Sara Lee® ArtesanoTM Potato Bakery Bread

Sara Lee® ArtesanoTM Potato Bakery Bread The bread has a deep taste that complements the sweetness of the French toast custard, due to potato, sea salt, and a touch of butter. Its thick slices hold up well while baking, and toasting the bread beforehand adds structure to the dish.

To make this dish largely dairy-free, I used unsweetened vanilla almond milk. This dish may also be prepared using whole milk, which results in a richer custard foundation.

I used coconut sugar, but white or brown sugar would work as well.

Coconut Oil- I like refined coconut oil since it doesn’t have the coconut flavor and scent. However, butter or a neutral oil will suffice, and the quantities will be the same.

For the topping, I used crushed pecans, although walnuts or sliced almonds would also work. If you don’t like nuts, leave them out.

How to Make a Potato Bread French Toast Casserole

If you only need half of a loaf of Sara Lee® ArtesanoTM Potato Bakery Bread, halve the recipe.

You’ll want to toast the bread before adding the custard, whether you’re preparing it straight away or later.

Slice the bread into cubes and roast them on a baking pan at 350 degrees for approximately 7 minutes, or until gently toasted. This has to be done in two batches.

While the bread is toasting, make the custard by whisking together the eggs, milk, sugar, and cinnamon in a large mixing dish.

Using oil or butter, grease a 9 x 13 baking dish. Place the toasted bread pieces on a plate and pour the custard equally over them.

If I’m baking right immediately, I like to gently throw some of the bread into the dish to ensure that it all receives a little custard. If you’re making it ahead of time, wrap it in foil and put it in the fridge.

At 350 degrees, bake the French Toast Casserole wrapped in foil for 30 minutes, then remove foil, top with cinnamon pecan topping, and bake for another 15 minutes.

Overnight Procedure

Keep in mind that if you make the recipe overnight, the texture will be closer to a bread pudding rather than the more structured texture seen above when baked right away.

It’s also crucial to take the dish out of the fridge while the oven heats up. It’s not a good idea to bake a cold dish in a hot oven.

The pecan topping may be made ahead of time and added during the final 15 minutes of baking.

How to Serve and Store French Toast Casserole

Allow at least 10 minutes for the dish to cool before serving. My family loves it with a drizzle of maple syrup and bacon pieces.

If you intend on serving the rest, keep leftovers in the fridge for a couple of days and reheat portions in the microwave or oven.

Instructions 

  • Preheat the oven to 350 degrees Fahrenheit. Slice the bread into cubes and roast them on a baking pan for approximately 7 minutes, or until they are gently browned. This has to be done in two batches.

  • Combine the eggs, milk, sugar, and cinnamon in a large mixing dish. Mix well and put the custard aside.

  • Using oil or butter, grease a 9 x 13 baking dish. For easier serving and cleanup, line the pan with parchment paper. Place the toasted bread pieces on a plate and pour the custard equally over them.

  • If baking immediately, I like to gently toss some of the bread in the dish to ensure that it is evenly covered with custard. If you’re making it ahead of time, wrap it in foil and put it in the fridge.

  • Cover the French Toast Casserole with foil and bake at 350 degrees for 30 minutes. While the dish is baking, combine the sugar, cinnamon, and pecans with the coconut oil or melted butter.

  • Remove the foil after 30 minutes of baking, sprinkle the pecan topping on top, and bake for another 15 minutes.

  • Remove from the oven and set aside for at least 10 minutes to cool. Serve with maple syrup on the side.

 

This is a recipe that I grew up on and can be made quickly, is easy to make, and is a unique dish with a lot of taste and different textures.
