- 14 teaspoon pepper
- 2 diced Roma tomatoes
- 1 chopped jalapeno
- 1 small sliced onion
- Lime Juice (1 tbsp.)
- 1 tbsp. Cilantro, chopped
- season with salt to taste
- 1 chopped white onion
- 1 chopped bell pepper
- 1 tbsp. Extra Virgin Olive Oil
- season with salt to taste
- Chili Beans, 1 CUP
- 6 Tortillas (flour tortillas)
- 14 CUP CHEDDAR CHEESE, GRATED
- a quarter cup of sour cream
- Wedges of Lime
- In a food processor, combine all marinade ingredients.
- Overnight marinate the beef and chicken breasts.
- In a mixing dish, combine all of the ingredients for the pico de gallo. Refrigerate until ready to serve.
- Cook the chicken for 4 minutes on each side on the grill.
- Cook the meat for 3 minutes on each side on the grill. Before slicing, let the meat rest for at least 10 minutes.
- In a grill pan, sauté the onions and bell peppers.
- In a nonstick pan, reheat the tortillas.
- Fajitas should be served with a tortilla, pico de gallo, sour cream, cheese, and chili beans.
