Homemade Chocolate Pudding |
I’ve never been a fan of boxed chocolate pudding mixes, but I recently realized that they are very simple to make at home. My favorite chocolate pudding is the kind with the big marshmallows in it. It always seemed to lose its “puddingness” after being in the fridge for too long, but I found that if I refrigerate it overnight, it will stay thick and creamy for a few days.
This is an excellent pudding but could also be a dessert for a party. I would bring this pudding in a tin and also make mini tarts in the same tin (which is why it is called mini tarts and not mini quiches) I would also make mini tarts with the leftover mixture to accompany tea time. This pudding is also vegan if you leave out the cream or use vegan cream.

Continue whisking!
Pour the milk into a medium-sized saucepan, but don’t put on the heat just yet.
(If you’re comfortable multitasking, you can.) However, we don’t want this dish to be too time-consuming (we don’t want to have to keep an eye on the milk to make sure it doesn’t boil over while we’re doing other things).
In the same saucepan with the milk, mix in the cocoa powder and granulated sugar until there are no more lumps.
This may not be feasible with cold milk depending on the cocoa powder you choose; simply remember to do it later while heating the milk. Then, for the time being, put the pot aside.
Remove the eggs from the shells.
Separate the eggs into yolks and place them in a medium-sized mixing basin. The egg whites may be saved and used in other recipes (see some suggestions in the recipe card below).
Toss in the icing sugar and stir well!
Now add the powdered sugar to the egg yolks and beat everything together with your electric mixer’s regular beaters.
Continue to combine.
Continue to stir until the mixture has a creamy consistency and is lighter in color (from yellow to lighter).
Combine the cornstarch and a little amount of milk.
Add the cornstarch and the equal quantity of milk from the saucepan at this point. This is done to keep the consistency of your mixture from becoming too stiff.
Make sure there are no lumps in the mixture.
Mix everything together with your electric mixer until there are no cornstarch lumps.
Combine the ingredients in a mixing bowl.
Return to the chocolate milk in the pot, please. Bring the milk to a boil, stirring constantly.
Remove the milk from the heat as soon as it begins to boil and whisk in the egg, sugar, and cornstarch mixture. Make sure you’re continuously whisking.
While the chocolate pudding thickens, whisk continuously.
Return the saucepan to the hot heat and let the pudding mixture to thicken for 1-2 minutes. Continually whisk!
Remove the pudding from the heat after it has thickened and spoon or pour it into serving dishes. Allow time for it to cool.
Cover the pudding with cling film as it cools if you don’t want it to develop the skin that some people despise.
Our chocolate pudding, with a dollop of whipped cream on top!
Before serving, garnish the chocolate pudding with fresh fruit, such as cut strawberries or raspberries, as well as whipped cream.
Storage Suggestions
Homemade chocolate pudding is best served immediately, but leftovers may be kept in the fridge for up to two days.
Simply refrigerate the pudding in an airtight jar with a lid or cover it firmly with cling film.
Ingredients
- 2 quarts of milk
- a third of a cup of cocoa powder
- 2 1/2 teaspoons sugar, granulated (more or less to taste)
- 3 eggs, medium size
- a third of a cup of powdered sugar
- cornstarch, 3 1/2 tblsp.
Instructions
- Pour the milk into a medium-sized saucepan and place it on the burner. Turn off the heat for the time being. Whisk together the cocoa powder and granulated sugar in the milk until it is well distributed. There should be no dried cocoa powder left in the house. Set the pot aside for the time being.
- Remove the egg yolks from the egg whites and place them in a medium-sized mixing dish. The egg whites may be used in another recipe, such as coconut macarons or cinnamon stars.
- Now, add the powdered sugar to the egg yolks and beat them together with your electric mixer’s regular beaters. Continue to mix until you get a creamy, lighter-colored consistency (more white than yellow).
- In a separate saucepan, combine the cornstarch and the equal quantity of milk. Use the electric mixer to thoroughly blend everything once again. Set aside this mixture.
- Return to the milk pot on the burner. While heating the cocoa powder milk to a boil, whisk constantly.
- Remove the milk from the heat as soon as it reaches a boil. While whisking continuously, pour the egg-sugar-cornstarch combination into the milk pot. This stage benefits from having a second pair of hands!
- When the bowl is empty, return the saucepan to the hot burner and let the mixture to thicken for 1-2 minutes. Make sure you’re continuously whisking.
- Pour the pudding into serving dishes after it has thickened, and set aside to chill. As the pudding cools in these dishes, it will thicken somewhat more.
- Before serving, garnish the chocolate pudding with fresh fruit (such as sliced strawberries) and/or whipped cream.
Notes
- We served our chocolate pudding with whipped cream on top, but it’s delicious enough to eat on its own. You are free to alter the quantity of sugar to suit your own tastes.
- We use unsweetened cocoa powder in this recipe. If you’re using cocoa powder that’s already sweetened, you’ll need to cut down on the granulated sugar.
