Low-Carb Chicken Dumplings – Recipe

My wife and I have been having a lot of fun coming up with new low-carb recipes – and we’ve made a lot of them. Today, we’re sharing one of our latest creations with you. These chicken dumplings are made from a fairly simple recipe that you can easily double or triple. (And if you’re a busy person, you can also make the dumplings ahead and freeze them) The dumplings are actually a little easier to make using a food processor, though we really enjoyed kneading dough by hand, too.

These dumplings are very popular in Eastern and Southern China, and are usually served at Chinese New Year celebrations. The dough is very similar to wonton wrappers, but I have substituted chicken for the pork fillings.

Instructions

  1. In a small bowl, combine peanut butter, sriracha sauce, ginger garlic paste, soy sauce, vinegar, and cilantro. Mix until everything is well mixed.

  2. Mix with the oil well. Season with a pinch of salt and a squeeze of lime juice. Combine all of the ingredients in a large mixing bowl and put aside.
