- 4 fresh catfish fillets, each 6 ounces
- 1 serving of tortilla chips crushed to a fine powder
- 14 cup cornmeal (yellow)
- 12 cup beer (light or normal)
- 14 cup fresh lime juice plus 2 teaspoons
- 2 teaspoons chopped fresh cilantro
- 1 seeded and coarsely chopped tiny jalapeño
- 12 tsp. kosher salt
- cayenne pepper (1/4 teaspoon)
- 1 teaspoon cayenne pepper
- 1 teaspoon cumin powder
- 4 oz. cubed processed cheese (Velveeta, for example)
- 14 cup salsa (spicy or mild, as desired)

Mix the beer with 14 cup lime juice, then add the chopped cilantro and jalapeño.

Pour the marinade over the catfish fillets in a shallow dish or glass baking dish. To make sure the fish is thoroughly covered, turn them over. Refrigerate the dish for approximately 30 minutes after covering it.

Preheat the oven to 400 degrees Fahrenheit. Using cooking spray or a little olive oil, coat a baking dish.

Combine cornmeal and crushed tortilla chips in a mixing bowl. Combine the kosher salt, cayenne pepper, chili powder, and powdered cumin in a mixing bowl.
