Caramel Apple Snickerdoodles blend the flavor of your favorite cinnamon/sugar cookie with chewy caramel and juicy apples!
I was attempting to come up with a fun autumn variation on one of my favorite cookie recipes when I came up with Caramel Apple Snickerdoodles. The snickerdoodles are delicious on their own, but when you add the apples and caramel, they become incredible. I wish I could describe how delicious these are, but you’ll have to try this recipe for yourself to see for yourself.
APPLE CARAMEL SNICKERDOODLES
- 1 cup unsalted unsalted butter, room temperature
- a third cup of sugar
- 1 egg
- 2 tsp vanilla extract extract
- flour (three cups)
- 2 tsp tartar sauce
- 1 teaspoon of baking soda
- 2 1/2 teaspoons of cinnamon
- a half teaspoon of salt
- 1 cup apples, peeled and coarsely diced
- Werther’s Soft Caramels (about 30) (you will need two 4.5 oz bags)
TOPPING
- 1 tablespoon of sugar
- 1 teaspoon of cinnamon
- To make the topping, combine the sugar and cinnamon. Remove from the equation.
- With an electric mixer, cream the butter and sugar until creamy (1-2 minutes). Set aside after adding the egg and vanilla.
- Combine the flour, cream of tartar, baking soda, cinnamon, and salt in a separate basin. Slowly add the dry components to the wet ingredients and blend on low speed until well mixed.
- In a large mixing bowl, add the apples and stir until thoroughly mixed.
- Scoop out the dough with a cookie scoop and flatten it slightly with your fingertips. Place one of the caramels on top of the dough, flattening it slightly. Then shape the dough into a ball and mold it around the caramel.
- Roll each dough ball in the topping ingredients until it is completely covered. Place the cookie dough balls on a cookie sheet that has been buttered. Bake for 10-11 minutes at 350°F, or until the cookies are gently browned. Before attempting to transfer the cookies to a wire rack, let them to cool for at least 15-20 minutes on the baking sheets. You can also eat them with a spoon while they’re still warm. And a scoop of vanilla ice cream.

M is my third kid, and she has a really unique personality. She can be the nicest little thing one minute and then be a snarky and obstinate jerk the next. She’s been amusing our family with her sense of humor since she was a newborn – she’s a total goofy with the faces to prove it!
