We made this dish with both fresh cauliflower in the food processor and riced cauliflower from a freezer package. Surprisingly, the frozen cauliflower bag worked just as well, and it was a lot simpler! If you want to use a frozen 10 oz package of riced cauliflower instead of fresh cauliflower, the frozen quantity will enough. However, make sure the frozen cauliflower is thawed before squeezing out as much liquid as possible.

If you want to use a frozen 10 oz package of riced cauliflower instead of fresh cauliflower, the frozen quantity will enough. However, make sure the frozen cauliflower is thawed before squeezing out as much liquid as possible. This recipe makes one 12-inch pizza.
To make the cauliflower crust, combine the following ingredients.
- 1 pound (454 g) freshly riced fresh cauliflower (about 2 cups or 1/2 head)
- 1 (one) big beaten egg
- 1 cup grated parmesan cheese (100 g)
- 1/2 cup (56 g) almond flour, superfine
- 1/2 teaspoon garlic powder (2.5 mL)
- 1/2 teaspoon onion powder (2.5 mL)
- dry herbs, 1/2 teaspoon (2.5 ml)
- to taste, freshly crushed ground pepper
Preheat the oven to 425 degrees Fahrenheit/220 degrees Celsius. Preheat oven to 350°F. Line a baking sheet with parchment paper and gently oil it.
If using entire cauliflower, coarsely chop it before pulsing it in a food processor until it has the texture of fine rice. If necessary, work in batches and remove any big pieces that were not chopped thoroughly.
Place the riced cauliflower in a large mixing bowl and press out as much water as possible using paper towels or a clean kitchen towel.
In a large mixing bowl, add the eggs, parmesan cheese, almond flour, garlic powder, onion powder, herbs, and pepper.
Make a mound of the cauliflower mixture on the oiled parchment paper. Flatten and shape the crust into a 12-inch round or square shape approximately 1/4-inch (6mm) thick by patting and pressing together.
Bake for approximately 20 minutes, or until the cauliflower crust has firmed up and become light brown around the edges. Remove the crust from the oven and set it aside to cool for 5-10 minutes so it can firm up.
Return the pizza to the oven with your preferred toppings. Bake for a further 10 minutes, or until the cheese has melted and the toppings are golden brown.
