  • 2 tablespoons fresh tarragon leaves, chopped
  • 3 beaten egg yolks
  • 2 fresh thyme sprigs, to serve

  3. In the dish, heat the remaining oil. Cook for 5 minutes, stirring occasionally, or until carrots and onions are tender.
  4. Cook for 5 minutes, stirring occasionally, until the mushrooms are cooked. Return the chicken to the dish and pour in the wine. Bring the water to a boil.
  5. Boil for 2 minutes, or until the alcohol has burned out. Add the stock and mix well. Bring the water to a boil. Transfer to the oven and bake, uncovered, for 45 minutes or until chicken is tender.
  6. When the chicken is done, move it to a dish and cover it to keep it warm.
  7. In a jug, whisk together the egg yolks, tarragon, and cream. Place the cream mixture in a casserole dish over low heat.
  8. For approximately 5 minutes, stir continuously until the sauce has thickened somewhat. Lemon juice should be added at this point. Salt & pepper to taste. Serve with crusty bread or over a bed of rice, garnished with thyme.
