Place the skewers in a big container. Cover with water and soak for at least 20 minutes or up to 4 hours. Drain thoroughly before threading the chicken on the grill.

- 8 boneless chicken thighs, thinly sliced
- 1 wooden skewers package
- 2 shallots (or sliced 1/4 onion)
- 4 garlic cloves
- 1/4 cup lemongrass, minced (fresh or frozen)
- 1 thinly sliced ginger, about the size of a thumb
- a half teaspoon of turmeric
- 1 to 2 sliced fresh red chiles (to taste, or 1/2 teaspoon to 1 teaspoon cayenne pepper)
- 3 tablespoons soy sauce (dark) (available at Asian food stores)
- a third of a cup of fish sauce
- 2 teaspoons coriander powder
- cumin (2 teaspoons)
- 2 tablespoons oil (vegetable)
- brown sugar (six tablespoons) (you need all of this)

- In a food processor or chopper, combine the shallots, garlic, lemongrass, chiles, ginger, coriander, cumin, turmeric, soy sauce, brown sugar, fish sauce, and oil to create the marinade.
- Taste the marinade to ensure that it is sweet, spicy, and salty to your liking. If you want it to be hotter, add additional chile. To alter the flavor, add additional fish sauce or sugar (in lieu of salt).
- Chicken should be cut into tiny pieces or strips.
- Pour the marinade over the chicken pieces in a basin. Allow to marinate for at least 2 hours and up to 24 hours after stirring well to mix.
- Thread the meat onto the skewers once it’s done. Fill the skewer up to 3/4 full, leaving the bottom half empty to flip the satay easily.
- The first time you flip the satay, baste it with the remaining marinade.
- Depending on how thin your pork is, the satay should be ready in 10 to 20 minutes.
- Serve with Thai peanut sauce, jasmine rice, or coconut rice for dipping.
