1632466352_93_CHOCOLATE-CHIP-OATMEAL-COOKIESOur family loves chocolate chip cookies in any form, and they were even more enamored when I added oats to this recipe! The combo of chocolate and oats is unbeatable. I mean, I like Oatmeal Raisin Cookies as well, but chocolate is always a winner! Also, don’t forget the pudding mix. It adds flavor and gives the cookies a wonderful soft, chewy texture.

It’s simple to make homemade chocolate chip oatmeal cookies! Preheat the oven to 350 degrees Fahrenheit.

I beat together the butter, shortening, brown sugar, white sugar, eggs, and vanilla with my Kitchenaid mixer until smooth. Stir in the pudding mix one more. Add the flour, baking soda, and salt to the sugar mixture and whisk to combine.

Drop by rounded teaspoonfuls onto parchment-lined cookie sheets and bake for 9-11 minutes, or until light and golden. Remove from the oven and set aside to cool for a few minutes before transferring to a cooling rack. Warm baked cookies are my favorite!

1632466355_162_CHOCOLATE-CHIP-OATMEAL-COOKIESKitchen Equipment for the Best Oatmeal Cookies

A KitchenAid mixer is the first item on the list. Mine is fantastic! I have a Bosch as well, but I like to bake with my KitchenAid. Every mixer comes with a cookie paddle that you can connect to the mixer. They’re simple to use and aid in consistent mixing of the components.

The second piece is a cookie scoop! I used to measure and scrape cookie dough onto the pans using two spoons years ago. It wasn’t an ideal method, and I often ended out with oblong biscuits of varying sizes. I noticed each and every one of my friend’s cookies looked PERFECT when she brought them to a gathering. What’s her secret? An ice cream scoop! 1/2 tablespoon, 1.5 tablespoon, and 3 tablespoon scoops are available. For these cookies, I used the medium size (1.5 teaspoons). I prefer to use the small cookie scoop when I’m feeding a big group. People prefer a smaller cookie, particularly when there are numerous other sweets available.

The final thing you’ll need is parchment paper. You’ll never have to worry about cookies sticking to the pan again if you use parchment paper! Packages are sold in bulk, so you may buy one and keep it for a long time. Pieces of parchment paper may also be reused!

1632466356_712_CHOCOLATE-CHIP-OATMEAL-COOKIESWhat is the best way to soften butter?

I prefer to use my microwave’s defrost mode to soften butter. If you need the whole 1/2 cup cube of butter, leave it in its paper wrapper; if not, put the quantity of butter you need in a glass or porcelain dish. I use my microwave’s lowest defrost setting and just let it run for 20 seconds. By pressing the butter with a rubber scraper, you can tell how soft it is. Allow it to reheat for another 5-10 seconds if it is still not soft to the touch, meaning it does not indent when you push into it. Keep a careful eye on it! Butter softens in a matter of seconds.

In this recipe, you may use either old fashioned or fast cooked oats. I’m a huge believer in making do with what you’ve got. I’ve tried both and prefer fast cooking since it results in a softer cookie, but they’re both delicious.
