Knead the dough by holding it in one hand and tugging it with the other, twisting and sinking the heel of the second hand into the dough. If the dough sticks, add a little more flour and knead for another 4 minutes, or until smooth and elastic.
  •  Wipe a clean, big bowl with a paper towel dipped in frying oil or sprayed with nonstick spray. Cover the bowl with plastic wrap after placing the dough in the prepared bowl and rotating it to coat all sides with oil. Rest for 2 hours in a warm, draft-free environment. Because there isn’t much yeast, the dough won’t double in size, but it will rise and soften somewhat. Rather of tossing the dough by hand, roll it into the appropriate shape on a flour-dusted peel or work surface.
