What Vegetables Should I Cook with Skillet Chicken?

Broccoli is included in our recipe since it is a traditional family favorite. However, spinach, kale, swiss chard, cauliflower, and mushrooms may all be used. The options for making this creamy garlic chicken dish healthy are limitless. There are plenty of nutrient-dense greens and vegetables to be found! You may also use frozen vegetables, but allow them to defrost somewhat before adding them towards the end of the cooking time. Allowing the frozen vegetables to lose their water in the pan will dilute the delicious garlic sauce. If you’re using more firm frozen vegetables, such as carrots, simmer them in the sauce for a few minutes longer to ensure they’re fully cooked.

Broccoli and Creamy Garlic Chicken in a Skillet

Time to prepare: 20 minutes

Time allotted: 30 minutes

The recipe calls for chicken breasts, but it may also be prepared using thighs or legs. Add an extra can of condensed cream of chicken soup and 1 cup of water if you want more sauce. You’ll have twice as much sauce! Season with additional salt and pepper if necessary. 

  • Boneless chicken breasts, 2 pounds (907 g) (or chicken thighs)
  • to taste salt
  • black pepper, freshly cracked, to taste
  • paprika, 1/2 teaspoon (2.5 mL)
  • 4 tablespoons butter (60 ml) split
  • 4 garlic cloves (4 garlic cloves), minced
  • 10.5 oz. (300 g) Condensed Cream of Chicken Soup (1 can), or more if necessary
  • 240 mL (1 cup) water
  • 2 cups (240 mL) broccoli, chopped (or spinach, kale, cauliflower, green beans, carrots, etc.)
  • Season the chicken with salt, pepper, and paprika before serving. Remove from the equation.

  • In a large skillet, heat the oil over medium-high heat. Half of the butter should be melted (2 tablespoons). Cook the chicken for 5 minutes on each side, or until it is golden brown. Remove the chicken from the pan and cover to keep it warm.

  • Melt the remaining 2 tablespoons butter in the same pan, then add the garlic and cook until it is gently browned and aromatic. Combine the condensed cream of chicken soup and the water in a mixing bowl. Cook until the mixture is hot and bubbling, then reduce to a low heat setting.

  • Return the chicken to the pan and add the broccoli. Cook for another 10 minutes, or until the chicken is cooked through, covered with a lid. If you want your broccoli to be more firm or al dente, add it when the chicken is nearly done to make it more crispy. If you’re using frozen vegetables, drain and defrost them first. If they remove all of the water from the sauce, it will become watered down and less delicious. Warm the dish before serving.
