I feel like I am constantly trying to reinvent ways to eat chicken. Either that, or we eat chicken the same 5 ways! I wanted to give you (and myself) a different recipe with chicken that was still nutritious, simple, and easy clean up. <Insert THIS recipe>. I love the added ricotta because it not only makes the caesar dressing creamier and thicker, but adds a significant amount of protein! Another great aspect?? You can have this put together and in the oven in just 5 minutes!

I never cover this dish when I prepare it. I’ve discovered that if I leave it uncovered, the cracker topping browns nicely and the chicken stays moist. To ensure an equal dispersion of heat, put the dish on the middle rack. Because oven temperatures vary, I suggest keeping a watch on your topping for the final 5-8 minutes. Simply cover for the remainder of the cook time if it seems to be becoming too brown! Cook chicken to an internal temperature of 165 degrees Fahrenheit.

  • 1 cup Ritz Crackers, crushed (about 1 sleeve)
  • 3–4 chicken breasts, thinly sliced
