Is it possible to prepare this meal ahead of time?

Yes, you can, and it’s a healthy make-ahead salad. However, we recommend waiting until just before serving to dress it. So, in your serving dish, combine all of the chopped ingredients, including the cheese. Separately, prepare the dressing. Allow it to cool in the refrigerator. GREEK SALAD IN 20 MINUTES

This salad may be used in a variety of ways. You are free to use whichever vegetables you choose. You may also adjust the vinaigrette’s tastes as well as the quantity of cheese you use! 

DRESSING INSTRUCTIONS:

  • 3 tblsp (45 ml) extra virgin olive oil
  • 30 mL red wine vinegar, 2 tblsp.
  • 1 medium lemon, 1 teaspoon lemon zest
  • 2 teaspoons (30 ml) lemon juice, preferably fresh
  • 2 garlic cloves (2 garlic cloves) minced
  • To taste, 1/4 teaspoon (1.25 ml) kosher salt or sea salt
  • 1 teaspoon (1.25 ml) black pepper, preferably freshly cracked
  • 2 teaspoons fresh chopped oregano, or 3/4 teaspoon (4 ml) dried oregano
  • 2 tablespoons fresh chopped dill, or 3/4 teaspoon (4 ml) dried dill

SALAD INGREDIENTS:

  • 1 big cucumber (peeled, seeded, and chopped) or 3-4 tiny cucumbers (peeled, seeded, and chopped)
  • 4 diced ripe roma tomatoes (or 1 cup (240ml) halved cherry tomatoes)
  • red onion, chopped, 1/3 cup (120 ml)
  • half 1/2 cup (100 g) pitted black kalamata olives
  • feta cheese, 4 oz. (115 g)
  • parsley, chopped, 1/4 cup (60 ml)
  • To make the dressing, combine all ingredients in a mixing bowl. In a large mixing bowl, combine all of the dressing ingredients (olive oil, red wine vinegar, lemon zest, lemon juice, garlic, salt, pepper, oregano and dill). Taste the dressing and season to taste with salt, pepper, or other spices.

  • In a large mixing bowl, combine all of the salad ingredients. To coat everything with the dressing, gently mix everything together. To taste, add more fresh lemon zest or juice (optional). Chill before serving.
