To achieve smokiness and depth of flavor, most salsas are prepared by roasting the ingredients. This salsa verde recipe, courtesy to my mother-in-law, does not need roasting. Rather, we cook the tomatillos and puree them with fresh cilantro.
Tomatillos: How to Cook Them
Tomatillos serve as the foundation for salsa verde. If you’ve never seen one before, they resemble a green tomato with a husk on top.
If you’re not going to use the tomatillos right away, keep them in an airtight container with no cover in a cold, dry location.
To make the salsa, remove the tomatillos from their husks and put them in a colander. The husk has left a waxy film on the tomatillos. They should be thoroughly cleaned and dried with a kitchen towel.
If they are really waxy, you can add a little bit of vinegar to a bowl of water and place the peeled tomatillos in the bowl for a few minutes, then rinse again.
Salsa Making Instructions
In a small saucepan, combine the rinsed tomatillos, half an onion, and 1-2 jalapenos (depends how spicy you want it). Boil for approximately 10 minutes, covered with water.
After boiling, the tomatillos will turn from brilliant green to a yellowish-green color.
Transfer the tomatillo, onion, and jalapeño to a blender with half a cup of the cooking liquid using a slotted spoon.
Then toss in a bunch of cilantro, two raw garlic cloves, and a pinch of salt. Blend well and season to taste.
Fill a jar with the mixture and put it in the refrigerator to chill. Salsa may be kept in the refrigerator for approximately a week in an airtight container.
Smaller amounts may be be frozen in freezer-safe bags and then defrosted as needed. The salsa is still delicious!
