There’s just something so good about grilling shrimp and vegetables. It’s easy, it tastes great, and you can top it off with a perfectly grilled jalapeno. This recipe is much more than a simple dinner recipe, though. It’s also a wonderful way to get the family involved in the kitchen. You can get everyone involved in chopping the peppers, mashing the garlic, and grilling the shrimp. They’ll feel like they’re helping to cook dinner, and they’ll love the results.

Shrimp fajitas is one of my favorite dishes. I don’t like messing with the same ingredients; I know exactly what I want and I don’t like feeling like I’m having to compromise. That’s why I love this recipe. It’s simple, delicious, and a great way to get a bunch of vegetables in my diet. It’s also a great dish for entertaining because it’s ready in minutes.

One-pan dinners are my favorite, particularly when the recipe is as simple as these shrimp fajitas.

I keep frozen shrimp on hand in the freezer for those times when I need a quick and tasty dinner.

Marinade for fajitas

When preparing steak or chicken fajitas, the meat is usually marinated for taste and softness.

However, since shrimp is more sensitive, it will readily absorb flavors without the need for a lengthy marinate.

Chili powder, paprika, onion powder, garlic powder, salt, and pepper are all included in my own spice mix. After that, combine it with the shrimp and a little amount of oil.

It’s as simple as that! Toss everything about and call it a day!

Shrimp Fajitas: How to Make Them

Cooking the shrimp fajitas in a cast iron pan is my favorite technique. I like the sear and taste that cast iron provides.

Cooking them on a grill pan on the grill is another option. Use a sheet pan in the oven or a normal skillet on the stove.

Please don’t overcook the shrimp, regardless of whatever technique you choose.

These fajitas must be served immediately. Otherwise, the shrimp will get smaller and tougher as they simmer longer.

Toppings & Pairings for Fajitas

These tacos were topped with a basic guacamole. Salsa, chopped cilantro, or sliced jalapenos for spice are among more options.

Fajitas are best eaten with warm flour tortillas, but they may also be served with Mexican Rice and Beans as a side dish.

Instructions 

  • Shrimp should be peeled, deveined, and dried. Season with 1 tablespoon of oil and fajita seasoning.

  • Preheat the Cast Iron pan and add the remaining oil, bell peppers, onions, and seasonings. Cook, stirring often, for approximately 7 minutes, or until the onions and peppers are tender.

  • Remove the onions and peppers from the pan and add the seasoned shrimp. Cook for 2 minutes, or until shrimp is pale pink in color. Cook for another 2 minutes on the other side, or until the shrimp is no longer opaque. Overcooking the shrimp will cause it to turn rubbery.

  • Warm flour tortillas in a clean pan until warm, then cover in foil or a clean kitchen towel to keep warm.

  • Serve the shrimp fajitas in tortillas with guacamole on top.
