  • 2 medium (2 medium) zucchini or summer squash
  • 1/2 cup (75 g) parmesan cheese, or to taste, or any shredded cheese
  • 2 Tablespoons (30 mL) minced fresh herbs (or 1 Tablespoon dried herbs)
  • to gently cover the squash pieces in olive oil
  • to taste kosher salt or other flaky salt
  • black pepper, freshly cracked, to taste
  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Using parchment paper, line a baking sheet pan. 

  • Trim the ends of the zucchini squash and cut it lengthwise into 1/4″ thick slices. Apply a little coat of olive oil on both sides of each slice. To keep the herbs from burning, gently spritz the leaves with oil.

  • Arrange the slices in a single layer on the prepared baking sheet pan. Season each slice with salt and pepper to taste.

  • Top each piece with cheese and herbs.

  • Cook for approximately 20 minutes in the oven, or until the zucchini squash is cooked and the cheese has melted. Warm or at room temperature is OK.
