  • Preheat the oven to 375 degrees Fahrenheit.

  • Add onions, butter, salt, and pepper to a dutch oven over medium-low heat. Cook, stirring periodically, for 45 minutes, or until onions are a deep brown color. Add some fresh thyme leaves and flour to the mix. Deglaze the pan with stock and continue to stir until the sauce has thickened.

  • Add pork chops to a baking dish while onions are frying. Cover with aluminum foil and drizzle with olive oil. Preheat oven to 350°F and bake for 25-30 minutes, or until well done.

  • Toss the pork with the caramelized onions in the pan. On top of the pork chops, scatter some onions. Serve the pork chops with sliced Swiss cheese on top. Cover the dutch oven and wait for the cheese to melt. Serve and have fun!
