  • 4 SPRIGS FRESH OREGANO LEAVES –
  • 14 CUP OLIVE OIL EXTRA-VIRGIN –
  • 1 TEASPOON + 1 TABLESPOON VINEGAR OF WHITE WINE –
  • KOSHER SALT AND BLACK PEPPER, FRESHLY GROUND –
  • CORED, SEEDED, AND CUT INTO 14-INCH CUBES 1 MEDIUM TOMATO –
  • ONE SLICE OF 14-INCH PRESUNTO, SERRANO HAM, OR PROSCIUTTO, TRIMMED OF EXCESS FAT AND CUT INTO 14-INCH CUBES –
  • PEELED AND CUT INTO 14-INCH CUBES 12 MEDIUM SEEDLESS ENGLISH CUCUMBER –
  • 1 CUP 14-INCHE CROUTONS CUT FROM THE REST OF THE RUSTIC BREAD, TOASTED IN A DRY SKILLET IF YOU LIKE –

Instructions:

  • Soak the bread in cold water for 5 minutes to soften it. Squeeze out any excess moisture.
  • Â In a blender, combine the wet bread, tomatoes, red pepper, cucumber, garlic, and oregano, working in stages, until smooth. Whirl in the oil, vinegar, and 34 cup of water once more. Pass the soup through a fine-mesh sieve, pressing the particles through with the back of a ladle to extract as much liquid as possible. Refrigerate the soup for at least 2 hours, or up to 24 hours, after pouring it into a big bowl and covering it with plastic wrap. Taste and season with salt and pepper when ready to serve.
  • Â Place the diced tomato, presunto, cucumber, and croutons in four tiny ramekins. Allow your guests to assist themselves to the toppings by ladling the soup into chilled bowls.
