Pad prik khing moo is a delicious and healthy Thai stir fry red curry dish, with ground pork and green beans. You can use ground pork or chicken to make this dish, or use pork tenderloin, chicken breast or even beef. I personally use ground pork, as I like the texture of the pork better, but you can use chicken or beef if you prefer. I also like to use red curry paste. Not only is it a nice change from the usual green curry paste, but when you buy it at the Asian grocery store, it is usually in large tubs, and it is very cheap, so that is why I prefer to buy it in large tubs.
Red curry, known throughout the world as a fragrant and spicy Thai blend of coconut milk and sweet spices, is a staple of Southeast Asian cuisine. It is a flavor that is hard to resist, but is it also one that’s hard to get right? To help you take to this flavorful dish, we’ve put together a recipe for Pad Prik Khing Moo- Stir Fry Red Curry with Pork and Green Beans.
Ever since I was little, I have loved spicy, curry dishes. My mom’s red curry with pork and green beans is one of the most delicious meals I’ve ever had, and it is made with the most simple ingredients: rice, curry paste, green beans, and pork. As an adult, I have learned how to make curry dishes that taste like I’ve been eating them for years.
If you like Thai Red Curry but don’t want the added calories from coconut milk, this is the recipe for you. Pad Prik Khing is a beef, green bean, and red curry paste stir fry. Simple, fast, spicy, and delicious! I was shocked to discover I’d never cooked this meal before, since it’s so simple and filling. I made it a bit too hot, so I reduced the quantity of curry paste in the recipe below.
This meal may be made with any protein; I used pork tenderloin, but chicken, beef, shrimp, or mixed seafood would all be delicious! Pad Prik Khing is traditionally prepared using Chinese long beans, but because they are more difficult to come by, I just cut fresh green beans into an inch-thick slice. I also included thinly sliced makrut lime leaves, but if you don’t have any, you may leave them out. In my backyard, I have a large tree that my mother gave me. If you need any, I have enough to provide!
The primary ingredient, red curry paste, is what makes this meal so simple. I use Mae Ploy Red Curry Paste, which can be purchased here. Some recipes ask for the addition of sugar and fish sauce; I suggest tasting it first and then seasoning to taste. I added approximately a teaspoon of fish sauce, although the curry paste already contains fish sauce. If you want the meal to have some sauce, add approximately a quarter cup of water towards the end. This recipe is simple to prepare and is ideal for a weekday dinner. Serve with Thai Jasmine rice and a fried egg on top if desired.

Serve with Thai jasmine rice and a fried egg on top, garnished with kaffir lime leaves.
Last week a friend sent me a link to a Thai restaurant’s recent article on Pad Prik Khing Moo- Stir Fry Red Curry with Pork and Green Beans, and I had to order it after reading it. I really enjoyed it, but I couldn’t help but feel it could have used a little extra spice and flavor. So, I went to work to create my own version. The first thing I did was make a flavorful curry paste with my own blend of red and green curry. Then I added some pork, green beans, and some lemongrass. I fried the pork in some egg, and then added it to the curry. I served it with rice, and it. Read more about prik khing curry with coconut milk and let us know what you think.
