- Chicken Feet, 2 lb.
- 1 tablespoon curry powder You may also utilize timeric, which I’ve been including into all of my recent curry dishes.
- 3 garlic cloves, crushed or chopped
- 1 medium sliced onion
- 1/2 teaspoon dried thyme leaves or 2 sprigs thyme
- 1 Scallion (Stalk)
- 1/2 de-seeded Scotch bonnet pepper
- 6 berries of pimento (allspice)
- Ginger, a little bit
- 1 medium carrot, peeled and diced
- 1 tsp seasoning (all-purpose or chicken)
- 1 teaspoon of salt Season to taste, using more or less salt as desired.
- 2 tbsp Oil (Cooking)
- Water

Skinned and removed with care, cut off the nails, then wash in water with vinegar and lime juice before draining.

Season the chicken feet with chopped onion, smashed garlic, ginger, scallion, thyme, scotch bonnet pepper, pimento berries, and all-purpose seasoning salt in a mixing dish. 1/2 teaspoon curry powder and 1/4 teaspoon salt

Combine the seasonings with the chicken and set aside for 30 minutes to marinate.
Method of Preparation

Pour the cooking oil, the remaining curry powder, and the bay leaf into a saucepan and heat over medium heat. Add the marinated chicken feet and swirl as soon as the oil reaches smoke point.

Cook for approximately 3 minutes, or until the foot muscles tighten.

Add enough water to cover the meat in the saucepan, as well as the remaining salt. Cover and simmer for 50-60 minutes, or until the feet are tender and the liquid has reduced to gravy.

Add the carrot about halfway through.
If you’re using a pressure cooker, set it to high for 30 minutes, then remove it and add the carrots. Simmer until they’re tender.
