When I was little, I recall eating a lot of curry chicken feet.

It isn’t the most well-known Jamaican dish.

But I used to get thrilled whenever my grandma made curry chicken feet.

Because I like the flavor of the meal as well as the boniness of the chicken.

  • Chicken Feet, 2 lb.
  • 1 tablespoon curry powder You may also utilize timeric, which I’ve been including into all of my recent curry dishes.
  • 3 garlic cloves, crushed or chopped
  • 1 medium sliced onion
  • 1/2 teaspoon dried thyme leaves or 2 sprigs thyme
  • 1 Scallion (Stalk)
  • 1/2 de-seeded Scotch bonnet pepper
  • 6 berries of pimento (allspice)
  • Ginger, a little bit
  • 1 medium carrot, peeled and diced 
  • 1 tsp seasoning (all-purpose or chicken)
  • 1 teaspoon of salt Season to taste, using more or less salt as desired.
  • 2 tbsp Oil (Cooking)
  • Water

  • 1 lemon or lime watering the chicken’s feet

Cleaning and seasoning

  • Skinned and removed with care, cut off the nails, then wash in water with vinegar and lime juice before draining.

  • Season the chicken feet with chopped onion, smashed garlic, ginger, scallion, thyme, scotch bonnet pepper, pimento berries, and all-purpose seasoning salt in a mixing dish. 1/2 teaspoon curry powder and 1/4 teaspoon salt

  • Combine the seasonings with the chicken and set aside for 30 minutes to marinate. 

Method of Preparation

  • Pour the cooking oil, the remaining curry powder, and the bay leaf into a saucepan and heat over medium heat. Add the marinated chicken feet and swirl as soon as the oil reaches smoke point.

  • Cook for approximately 3 minutes, or until the foot muscles tighten.

  • Add enough water to cover the meat in the saucepan, as well as the remaining salt. Cover and simmer for 50-60 minutes, or until the feet are tender and the liquid has reduced to gravy.

  • Add the carrot about halfway through.

If you’re using a pressure cooker, set it to high for 30 minutes, then remove it and add the carrots. Simmer until they’re tender.
