One of the tips I learned in the webinar was to add in a food or two that had a low amount of carbs. After doing some research I found this delicious low carb keto coffee cake recipe that is also paleo, gluten free, and refined sugar free.

I wanted to recreate a childhood favorite with a modern twist, so we came up with this carrot cake Coffee Cake for Keto. It’s ideal for breakfast, a mid-afternoon snack, or even the holidays!

Many people wonder why we create so many dessert dishes, and the fact is that we’ve discovered through the years that this is exactly what customers want! Of course, eating whole foods and avoiding processed meals or items that are easy to overindulge in, such as sweets, is ideal, but it isn’t always feasible or sustainable.
Desserts are OK if you want this to be a fun, lifelong way of living. Here are a few of our favorites:
Every Time You Bake A Cake, It Will Be Moist
The almond flour and coconut flour mix ensures a perfectly balanced, delicious cake every time. Because the little quantity of coconut flour is only enough to make the cake thick and prevent it from coming apart, the ratio is typically 4 to 1. As you gain experience with low carb flours, you’ll be able to determine the ideal ratio and when to utilize which one.
Coffee cake should always be as rich and thick as possible, which is why this recipe benefits from a greater almond flour to coconut flour ratio. This cake has a 6 to 1 ratio, which is better for cake than a bread loaf like our Keto Garlic Bread, which has a 4 to 1 ratio. Don’t be scared to experiment with different components!

When baking anything with a topping, such as this recipe or our low carb pumpkin crisp, it’s critical to keep an eye on the topping during baking. Here are a few ways to avoid burning almond flour in your dessert:

Allow at least 15-20 minutes for anything big in size to rest before transferring and serving, such as a cake or loaf. You have a bit more freedom if you’re preparing smaller quantities, such as cookies or muffins, since 5-10 minutes of resting should enough!

For breakfast, eggs are usually a go-to since they are quick and hearty, but what if you grow bored with the same old thing? Well, you’re in need of a change, and this keto coffee cake is the ideal method to do it. You may bake one on Sunday and have it ready for the next week. Make two, freeze one, and bring the other to work to share!

Keto Coffee Cake
Carrot cake with cinnamon and a buttery biscuit crumble on top.

Instructions:

Preheat the oven to 350 degrees F and coat or line an 8-inch round cake pan with coconut oil spray.

Set aside the carrots that have been shredded.

Combine erythritol, stevia, melted butter, and eggs in a large mixing dish. Using a whisk, combine the ingredients.

Combine the shredded carrot with the almond flour, coconut flour, cinnamon, baking soda, and salt.

Set aside the batter in a greased or parchment-lined 8-inch round cake pan while you prepare the topping.

To make the topping, whisk together all of the ingredients in a mixing dish using a spoon or your hands.

Bake for 30-35 minutes with the topping on top of the batter.

To check for doneness, use a toothpick. Allow 15-20 minutes to cool before transferring and slicing.

It’s best to keep it in the fridge for up to 10 days in an airtight container.
