Pancakes: How to Make Them

In a blender, combine all of the ingredients and mix until smooth. Allow 10 minutes for the dough to rest.

Over medium-high heat, heat a large nonstick skillet. Grease the frying pan and set it aside. In the middle of the baking sheet, pour 1/4 cup pancake batter. After that, take the pan off the heat and tilt it in a circular motion to equally spread the batter. The pancakes should have a diameter of 5 to 6 inches (about the size of a corn tortilla). Cook for 2 to 3 minutes on each side in the oven.

Before flipping the pancake, carefully loosen all of the edges using a spatula. When the pancakes become golden, they’re done. If required, use wax paper to spread the pancakes.

Fill the cannolis as follows:

Drain the ricotta overnight using a fine mesh strainer coated with gauze, or dry it with kitchen paper after stirring to remove the moisture. This step is optional, although it adds density to the cannoli filling.

Combine the ricotta, keto sweetener, ChocZero milk chocolate chips, vanilla extract, lemon zest, and lemon juice in a mixing bowl. To mix, stir everything together well. Keep the cannoli filling refrigerated until you’re ready to make the pancakes.

This is how you assemble the pancakes:

1/4 cup cannoli filling should be plenty to fill each keto creamer. If required, roll the pancake around the filling and fasten with a toothpick. Sprinkle with additional ChocZero milk chocolate chips, nuts, and sugar-free ChocZero chocolate syrup before serving. YUMMY!
