Cheesy Corn Casserole

This cheesy corn casserole is one of my absolute favorite dishes to cook. Not only is it a literal lifesaver on the nights when I’m feeling lazy, but it’s easily one of the most delicious side dishes I’ve ever made. And, despite its cheesy roots, it’s surprisingly low in calories.

This is a matter of taste, but

With this Cheesy Corn Casserole, you may start a new holiday tradition this year. It’s the ideal balance of sweet, salty, and cheesy flavors. It just takes five minutes to put together, and then 45 minutes in the oven will have it on your table in no time!

This is a dish that is always served during the holidays. My children and hubby have both requested this meal. It also makes excellent leftovers when warmed. It’s cheesy and creamy, yet it’s also light. It won’t make your tummy feel heavy. When I know I won’t have time to prepare a time-consuming dish, I always think of this one. I’ll be able to throw it together quickly and shower and get ready while it bakes. It’s easy to do and always works out! Plus, it’s delicious!

Is it possible for me to prepare this ahead of time?

Yes! This is a fantastic meal to prepare ahead of time! You can prepare this ahead of time and keep it in an airtight jar in the refrigerator for up to 48 hours!

Is it necessary for me to use Velveeta?

I understand that not everyone enjoys cooking with Velveeta since it isn’t exactly the healthiest choice! If you want to make your own homemade Velveeta, we suggest following this blog recipe.

Is it possible to freeze this dish?

Absolutely! Before cooking, we suggest freezing it. It will keep for up to 3 months in a freezer-safe jar with an airtight cover. Bring it out of the freezer when you’re ready to cook and let it defrost. Then follow the usual cooking instructions!

Cheesy Corn Casserole Ingredients:

  • Corn cans (two)
  • 2 Creamed Corn Cans
  • Shredded Cheddar Cheese, 4 oz
  • Velveeta cheese, 4 oz
  • 2 CUP OYSTER CRACKERS, CRUMBLED
  • 2 TBS BUTTER (MELTED)
  • 4 beaten eggs

To prepare our Cheesy Corn Casserole, follow these steps:

Preheat the oven to 350 degrees Fahrenheit.

Fill a gallon-sized bag halfway with oyster crackers and smash them. I use a rolling pin since it speeds up the process. Set the crackers aside after they’ve been smashed.

Combine the remaining ingredients in a mixing dish and well combine. Last, add the crackers. In a large mixing bowl, combine the

Pour the contents of the mixing bowl into a greased baking dish. Distribute evenly. Preheat oven to 350°F and bake for 60 minutes. To incorporate all of the melted cheese, stir shortly before serving.

Ingredients

  • corn cans (two)
  • 2 creamed corn cans
  • 2 cup crumbled oyster crackers
  • 6 Eggs
  • 4 TBSP CREAM
  • Velvetta, 4 ounce
  • Cheddar Cheese, 4 ounce

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Set aside crushed oyster crackers in a bag.
  3. In a mixing dish, combine all of the ingredients and stir well. Stir in the crackers last.
  4. Fill a greased casserole dish halfway with the contents.
  5. Preheat oven to 350°F and bake for 60 minutes.
  6. Serve after a quick stir.
