Keto Pecan Muffins

I’ve always loved baking, and when I started a ketogenic diet last year, my love for baking took on a whole new meaning. I began experimenting with keto-friendly muffins and found that they turned out far better than I could have ever imagined. I’ve experimented with various keto muffin recipes on my blog and have developed a few of my own, and I thought that I would share them with you today.

Staying on a low carb diet has it’s challenges. Rather than eating boring salads and rice for lunch, it’s fun to break out of the norm with some tasty low carb desserts. These muffins are a favorite because you get the flavor of a pecan muffin, but none of the carbs.

A ketogenic diet is a low carbohydrate, moderate protein, high fat diet. A keto diet differs from a low fat diet or a low carb high fat diet in that it allows moderate amounts of carbohydrate intake while requiring fat to be eaten in greater amounts. Pecan pie was my all-time favorite dessert before becoming keto. At Christmas parties, I wouldn’t even look at the other pies. Soon after going keto, I discovered it wasn’t my passion for pecan pie that was driving me crazy, but rather my love for pecans! As a result, I’ve evolved into a year-round pecan dessert eater. Muffins with chocolate chips and pecans

Chocolate and nuts have recently become my favorite flavor combo. I can’t believe I didn’t realize how fantastic a combination that was until lately! A handful of nuts and Lily’s chocolate chips has become my late-night snack of choice, and it never fails to satisfy. Whether you agree or not, we’re certain you’ll like our Pecan Muffins on the Keto Diet! Note: I am no longer allergic to nuts; this video was shot before I discovered I had been misdiagnosed. Sorry for any misunderstanding!

Keto Pecan Muffins

Cinnamon and ginger-flavored chocolate chip pecan muffins.

40-minute total time

6 Large Muffins (Servings)

303 calories per serving

15-minute prep time

Time to prepare: 25 minutes

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit. Toast the pecans for 10-12 minutes on a sheet pan.

  • In a medium mixing bowl, combine the melted butter, eggs, hwc, vanilla, and stevia using a hand mixer.

  • Combine the remaining ingredients, except the pecans and chocolate chips, one more time.

  • Combine the chocolate chips and toasted, chopped pecans in a mixing bowl and stir until well mixed.

  • Grease a muffin pan and divide the mixture evenly among 6 muffin cups; this will yield 6 big muffins.

  • Preheat oven to 200°F and bake for 20-23 minutes.

  • Allow to cool for 5 minutes before serving. In a zip top bag, keep in the fridge.
