This is the ideal low-carb, easy-to-make breakfast for on-the-go. When fresh, delicious blueberries are mixed with coconut milk, lemon juice, and vanilla, they become a marriage made in heaven. Make a large batch to feed the entire family! Divine!

  1. In a blender, combine all of the ingredients and blend until smooth.

  2. Taste and, if necessary, add additional lemon juice.

 

This is a low-carb smoothie I’ve had a lot of success with. It’s loaded with healthy fat and protein, and tastes great. I make a lot of smoothies, and I’ve found that they can be used as a meal replacement, as a snack, or even as a dessert. It’s a great way to get more fruit or vegetables into your diet, and to get a little protein in there, too. Like most people, I’m not a big fan of eating greens for breakfast.
