  • 12 cup Rosarita Refried Beans (Traditional)
  • ½ cup Rotel Diced Tomatoes & Green Chilies, drained
  • a third of a teaspoon of ancho chili powder
  • 12 tsp cumin powder
  • 1 cup shredded romaine or iceberg lettuce
  • 1 cup shredded cooked chicken breasts or shredded rotisserie chicken
  • 12 cup Mexican mix shredded cheese
  • 12 cup pico de gallo, either handmade or store-bought**
  • a quarter cup of sour cream
  1. To get a somewhat chunky texture, mash avocado with lime juice and 18 tsp garlic powder with a fork. To taste, season with salt and pepper.
  2. Combine refried beans, drained canned tomatoes, chili powder, cumin, and the remaining 18 teaspoon garlic powder in a small pot. To taste, season with salt and pepper.
  3. Cook, stirring regularly, over medium-low heat until well cooked.
  4. To make tostadas, start by putting together the tortillas. Guacamole (avocado combination), bean mixture, lettuce, chicken, cheese, Pico de gallo, and sour cream are layered in each tostada shell.
  5. Serve right away.
