The sweet, creamy, velvety texture of rice pudding is an absolute dream come true, especially when topped with whipped cream. But can this traditional German dish be a starting point for a healthier, plant-based diet? Well, I’ve been eating rice pudding for the past three months and I wanted to share the results.

Milchreis Will Make You Reconsider When Rice Pudding Is Appropriate!

There are a lot of rice and milk recipes out there, but Milchreis has a unique flavor that keeps you coming back for more.

Milchreis, or German rice pudding, is a sweet supper dish that may also be served as a dessert.

Our Milchreis recipe, which literally means “milk rice,” produces a creamy German sweet rice that goes well with a little cinnamon and sugar or fruit on top!

North American Rice Pudding vs. Milchreis

Even though Milchreis is referred to as “German rice pudding,” it differs from rice pudding commonly consumed in North America in a few ways.

For starters, Milchreis may be served as a main course in Germany, while it is usually typically served as a dessert in North America.

When Lisa was younger, she used to eat it as a sweet main dish on occasion. A couple of times a month, she would enjoy a delicious supper with her family.

Milchreis with sugar and cinnamon (or fruit) or potato pancakes with apple sauce are two examples of a “sweet German supper.”

Rice branded “Milchreis” may be purchased in Germany and is used to create rice pudding.

Rice especially for rice pudding is seldom seen in stores in North America — at least not in Canada. Arborio rice, on the other hand, is a great short-grain rice.

Another distinction is that German rice pudding virtually never includes raisins and is never baked.

Eric’s mother prepares a traditional North American rice pudding with raisins cooked in the oven, so we’re well aware of the distinctions.

Step-by-Step Instructions for Making Milchreis

In a medium-sized saucepan on the stove, melt a little amount of butter.

Once the butter has melted, add the rice and cook for a few minutes, until it is just little transparent.

Combine the milk, sugar, vanilla extract, and a sprinkle of salt in a mixing bowl.

Stir everything together and cover the saucepan with the lid. Bring the milk to a boil, then reduce the heat to a low setting.

Allow the rice to cook for 20 minutes, or until it is soft and the liquid has been absorbed.

Your cooking time may vary somewhat depending on the kind of rice you use.

You may add a little extra milk to your German rice pudding if you want it to be creamier.

Serve the milk rice with a sprinkling of cinnamon and sugar on top, as well as fresh fruit like berries. You may also serve it with fruit salad or canned fruit as an alternative.

Storage Suggestions

Milchreis is best served fresh, but any leftovers may be kept in the fridge for a couple of days in an airtight container.

After that, you can either reheat or consume the leftovers cold. Because the rice may dry up in the fridge, you may need to add a little extra milk to make it creamy again.

Instructions

  2. Combine the milk, sugar, vanilla essence, and salt in a mixing bowl. Stir everything together with a wooden spoon before covering with the lid. Bring the milk to a boil in a saucepan. Reduce the heat to low after the water has boiled.
  3. Allow the rice to cook for about 20 minutes, or until it is soft and the liquid has been absorbed. Check the package instructions for the rice you’re using and modify the cooking time if necessary.
  4. Serve the rice with fruit or sugar and cinnamon.

Notes

  • If you want the Milchreis to have a little creamier consistency, add a little extra milk than the 2 cups listed above.
  • Fresh berries, canned fruit salad, or even peeled and gently cooked apples in cinnamon on the stovetop may be used as fruit toppings (delicious).
  • Leftovers may be kept in the fridge for a couple of days in an airtight container. Make careful to add a little extra milk while reheating since the rice may dry out in the fridge.
