It is a very simple dish with only four ingredients: rice noodles, shrimps, tofu, and garlic sauce. To make the garlic sauce you will need to buy red fermented chili paste. It is easy to find at any local market or Asian grocery store.

Pad See Ewe is a traditional dish from Northern Thailand. It consists of rice noodles stir-fried with soy sauce, egg and shrimp, topped with pork and sprouts over a bed of vermicelli noodles.

My son’s favorite meal is Pad See Ewe, a traditional Thai noodle dish. I’ve prepared this meal many times, but it took me a long time to refine the recipe and master the method for a true wok-fried flavor. Pad See Ewe means ‘Stir fried Soy Sauce,’ and that is exactly what the sauce is made of. When I was looking for a recipe, I saw that the majority of them included oyster sauce and soy sauce. My mother advised me to avoid using oyster sauce and instead use a mix of soy sauces to maintain the authenticity of Pad See Ewe.

You’ll need a trio of soy sauces to get started: Golden Mountain, Sweet Soy Sauce, and Dark Soy Sauce. These are from Amazon, but if you live near an Asian grocery shop, I suggest buying the Healthy Boy brand Sweet and Dark soy sauce, which is what I use. You’ll need fresh rice noodles to make soft, flexible noodles. These may also be found in the refrigerated area of Asian supermarkets. The noodles can keep for a few days in the refrigerator, but they are best eaten the same day. If fresh rice noodles are unavailable, these dried rice noodles will suffice. Pad See Ewe is traditionally prepared with Chinese broccoli, but I used broccolini instead since my family loves it. Broccoli from the grocery store would suffice. You may tailor the protein to your preferences. Shrimp & Tofu is a dish that my family loves, although it’s typically prepared in Thailand with thinly sliced pork. If you’re using chicken, beef, or pork, marinade it for a few minutes in some Golden Mountain Soy sauce to give it some flavor.

You won’t need to marinade the shrimp and tofu in soy sauce if you’re using them. Instead, chop the firm tofu into tiny cubes and drain the water between several layers of paper towels. Then, in a non-stick wok, pan fried in a few teaspoons of oil. Remove to paper towels and season with salt to taste. Then, in the wok, fry the shrimp until pink, then remove and put aside. Start with a dry wok after wiping off the pan and removing any cooking liquid from the shrimp. Fresh rice noodles usually come in 32 oz packages, which is enough for 4 meals. To prevent the noodles becoming mushy, cook one dish at a time. However, depending on the size of your wok, you may cook two (16 oz) portions, which is what I did.

Heat approximately 2 teaspoons of oil in a clean dry wok over medium-high heat. Add the minced garlic right away, mix it in, and then add two eggs. Allow for a few seconds for the eggs to set before scrambling. Cook for approximately a minute after adding the broccoli, then add the noodles and soy sauce combination. Allow the noodles to ‘fry’ for a minute after gently stirring them to coat them all. Then turn to cook the other side gently. Continue cooking for another 4 minutes or until brown pieces appear on the noodles. Return your protein to the pan, season with a pinch of white pepper, and remove from the heat. Plate the Pad See Ewe after gently tossing. For added heat and acidity, serve with pickled chiles or jalapenos. To create the second batch, repeat with the remaining half of the ingredients. Enjoy!

Pad See Ewe with Tofu and Shrimp

Instructions 

  • If using chicken, pork, or beef, slice thinly and marinade for a few minutes in a spoonful of Golden Mountain soy sauce. Follow the steps below for Tofu and Shrimp.

  • Cut the firm tofu into tiny pieces and drain the water between several layers of paper towels. Then, in a non-stick wok, pan fried in a few teaspoons of oil. Work in batches to avoid overcrowding the pan and allowing the tofu to crisp up. Remove it to paper towels after it has developed color on both sides and season with salt.

  • Remove the shrimp from the pan after they are pink and put aside. Start with a dry wok after wiping off the pan and removing any cooking liquid from the shrimp.

  • Heat approximately 2 teaspoons of oil in a clean dry wok over medium-high heat. Add 12 minced garlic cloves right away, whisk to combine, and then add 2 eggs. Allow for a few seconds for the eggs to set before scrambling.

  • Cook for about a minute after adding half of the broccoli, then add half of the noodles and 12 of the soy sauce mixture. Allow the noodles to ‘fry’ for a minute after gently stirring them to coat them all. Then turn to cook the other side gently. Continue cooking for another 4 minutes or until brown pieces appear on the noodles. Season the noodles to taste and make any necessary adjustments. If you want more salty, add more Golden Mountain; if you want more sweetness, add sugar.

  • Return your protein to the pan, season with a pinch of white pepper, and remove from the heat. Plate the Pad See Ewe after gently tossing. For added heat and acidity, serve with pickled chiles or jalapenos.

  • To create the second batch, repeat with the remaining half of the ingredients.
