Pesto Goat Cheese Dip

One of my favorites, perfect for a hot summer day, with a great combination of garlic, basil, and goat cheese.

“Goat cheese is my secret weapon,” says chef Giada of her go-to dip to season fresh bread and crackers. “It’s delicious on its own, or with a sliced baguette.” When her family visited Italy, Giada fell in love with the goat cheese specialty called gorgonzola dolce. The creamy, tangy cheese is made by aging the curd in its own whey, and Giada created a version with the flavors of basil, garlic, and extra sharp cheddar cheese for her Pesto Goat Cheese Dip.

For some of us who are very blessed, we have access to fresh, organic produce. For others, it may not be near as easy to find. To make up for that, here is a recipe for a Fresh Pesto Goat Cheese Dip. This can be served with crackers or pita, and is very versatile. It can be put on many things, but is so good, it can be eaten by itself with a fork!

Coming up with a meal to serve while you’re rushing from the kids’ practices and sports and then have plans with friends that evening may be hectic and chaotic! This dip is one of my favorites since all of the components are easy to have on hand for any occasion! Put it in the oven, and you’ll have a meal that doesn’t seem like you threw it together on the way out the door!

What if crumbled goat cheese isn’t available?

If crumbled goat cheese isn’t available, use normal goat cheese and distribute it evenly over the bottom of the plate before adding the pesto. It doesn’t matter what sequence the two components are in!

Is it necessary for me to use Biutoni Pesto?

To be honest, I think this pesto is the finest for this dip. You may make your own pesto or buy one, but the consistency of the dip will be determined by the quantity of olive oil in the pesto. I just remove part of the oil from a pesto that seems to be more oily before spreading it in the dish.

OK, so you don’t have to follow these exact steps, but you will want to do a couple of things to make your pesto, and this recipe: – Use the freshest ingredients you can find – Make sure everything is chopped very finely – And make sure you use enough sauce to coat the actual quantity of ingredients you’re making – As a result, a recipe with 15 ingredients that only use 12 is going to be far inferior to one that uses 25 ingredients..
