Provence is a region of France in the south that is near to the Mediterranean Sea. The favored food in this part of France is more Mediterranean than traditional French fare. The native cuisine will consist mostly of fish, fresh vegetables, and fruit, similar to the Mediterranean diet that we are all familiar with. Many of Provence’s recipes use olive oil, garlic, and tomatoes as main components. In reality, a tomato-based sauce is often used in Provencal Shrimp.
Provencal Shrimp or Scallop
This dish is delicious, and it can also be prepared with sea scallops, another favorite of mine. When I make this using scallops, I prefer to sear them first before adding the rest of the ingredients. This simply adds a lovely color and texture to them. A beautiful garden salad, a bed of asparagus, or a side of couscous are some more dish options.

Instructions

2 tablespoons avocado oil, heated in a big pan until shimmering

Season the shrimp with salt and pepper to taste. Cook the shrimp in the pan over high heat for 2 minutes, or until they are gently browned and slightly opaque.

Cook for 30 seconds with the garlic and capers in the remaining avocado oil in the skillet.

Add the lemon juice and turn the shrimp. Cover and simmer over low heat for 4 to 5 minutes, or until the shrimp are cooked through and the sauce has somewhat reduced.

Place the shrimp on plates and top with the Provencal sauce.
This is a wonderful dish to start with if you’ve just adopted the entire healthy eating plan. This meal has a little over 400 calories due to the sautéed escarole. That’s not terrible!
This simple shrimp recipe is one of my go to meals when I’m in a rush or looking for a light dish. The onions, white wine and garlic, sautéed in olive oil, are what really make this dish.
