This is the recipe you need when you don’t have a lot of time but yet want to make something tasty and savory for supper. The Quick Taco Rice Bowl has just 6 ingredients and takes less than 12 minutes to prepare! It’s filling and serves the whole family! This is your go-to weeknight meal!

In our house, Mexican food is a favorite. I won’t claim it’s always “genuine,” but it always tastes delicious and has some of the classic ingredients of Mexican cuisine: cilantro, cumin, fiesta cheese, lime juice, beans, or rice! This recipe is a great, easy option for a good Mexican dish. Taco meat that has already been seasoned with taco seasoning makes this a breeze. Because you don’t have to wait for conventional rice to cook, Rice in a Hurry makes life so much easier. You may simply change or replace several of the components in this meal to suit your family’s preferences!

What is the definition of instant rice?

Rice that has been precooked is known as instant rice. The kind we use is dehydrated, which allows it to cook faster. Because instant rice is fully cooked, all that is required to make it is to microwave it or rehydrate it with hot water. The following are the ingredients for our Quick Taco Rice Bowl:

  • Corn in a can
  • Salsa
  • Lime
  • Minute Rice
  • Meat for tacos, prepared
  • Cheese that has been shredded

To create our Quick Taco Rice Bowl, follow these steps:

To begin, combine the water, salsa, and lime juice in a measuring cup. Bring all three ingredients to a boil in a big pot.

Stir add 3 cups of instant rice once the mixture starts to boil. Cover for 5 minutes after removing the pan from the heat. You want to be sure that all of the liquid has been absorbed.

Return the rice to the stovetop over low heat and fluff with a fork.

Stir in the warmed taco meat and cheese, and continue to heat until the cheese is completely melted.

What can I use instead?

Ground turkey, ground chicken, or even ground pig may be used as meat. Pre-made taco meat can be found in the freezer area of most supermarket shops, making this even easier! We cook ground beef in a skillet with our own taco seasoning.

Rice: If you don’t have any minute rice on hand, you can simply use normal cooked rice instead. 3 cups cooked rice + 1 cup salsa + all other ingredients + completely heated through = delicious!

Salsa: We like to use a thick, chunky salsa since it gives a lot of texture to the meal. If you want, you may use any salsa, pico de gallo, even a can of Ro*tel!

This is a fantastic one-dish meal that will satisfy the whole family. My spouse like bringing leftovers to work since it reheats well. Wrap it in a tortilla or, if you’re feeling brave, include it in your morning eggs! I even toss it on top of a large salad with a tasty jalapeo ranch dressing.

Ingredients

  • 2 c. liquid
  • 1 drained yellow corn can
  • 1 cup salsa chunky (More to garnish before serving if wanted)
  • 1 lime’s juice (about 2 Tablespoons)
  • 3 cups instant rice (Minute Rice, for example)
  • 1 pound taco meat that has been cooked and seasoned with taco spice
  • 1 1/2 cups shredded taco cheese mix
  •  
  • Green onions, sour cream, guacamole, avocado, chopped tomatoes, and additional cheese are optional garnishes.

Instructions

    1. Place water, salsa, and lime juice in a big skillet or pan. Bring the water to a boil.
    2. Stir in 3 cups of minute rice after the water has reached a boil. Remove from heat and let aside for 5 minutes to enable the water to soak.
    3. Add the seasoned, cooked taco meat and cheese after the water has been absorbed. Cook, stirring occasionally, over medium heat until well cooked.
    4. Garnish with green onions, avocado, cilantro, or anything else you want!
    5. Enjoy!
