Let’s face it, no one can keep the pounds off. They try, but can’t. It’s just not possible. This is the story of my weight loss journey, and my time as the fat girl. The journey started roughly 8 years ago when I decided I wanted to be a little healthier. I began a fad diet, which I lost a little weight, then gained some again. I continued this cycle about 6 more times. Each time I thought to myself “I will never let myself gain weight again” but it always happened. Then, I started to gain weight.

We have all found it hard to get in shape, and sometimes we just don’t have the time to spend hours in the gym doing our workouts. That’s why I created Shredded Buffalo Chicken Tacos. These tacos are full of lean proteins and vegetables that will keep you full and satisfied.

Once I made my first shredded buffalo chicken tacos, I was hooked. They are a perfect combination of savory and spicy with the perfect serving of creamy avocado and bright relish. The trick to keeping these tacos healthy and under 300 calories is to make your own tortilla. You can buy them pre-made, but they aren’t as good. The homemade tortilla has much more flavor and texture.

This dish helps me feel like I’m cooking a delicious and distinctive supper on the fly that’s also easy and stress-free!

What is the origin of the name “buffalo sauce”?

Buffalo wings are said to have originated in Buffalo, New York, with most culinary historians claiming that they were originally served at the Anchor Bar there. That tavern was owned by a couple called Frank and Teressa Bellissimo, who bought it in 1939. Buffalo wings are usually served hot, with celery and carrot sticks for dipping in blue cheese dressing.

Shredded Buffalo Chicken Tacos Ingredients:

  • Chicken Pulled
  • Tortillas
  • Dressing: Ranch
  • Cheddar Cheese, Extra Sharp
  • Buffalo sauce by Frank’s

Shredded Buffalo Chicken Tacos are easy to prepare.

Heat the chicken according to the package instructions.

Pour into a dish and shred with two forks once done.

Then, liberally apply Frank’s Red Hot Buffalo Sauce on the chicken. Make a thorough mix.

On your tortilla, spread a layer of blue cheese dressing. If you want, you may use ranch dressing instead! Pile on as much meat as you like and top with strong cheddar cheese.

Ingredients

  • 1 pound of precooked chicken (pulled)
  • 6 tortillas (flour)
  • 1 cup Cheddar Cheese (Sharp)
  • 1/2 cup blue cheese or ranch dressing
  • Frank’s Buffalo Sauce (1/2-1 cup)

Instructions

  1. Warm the chicken according to the package instructions.
  2. In a mixing dish, shred chicken and pour 1/2-1 cup Frank’s Buffalo Hot Sauce over it. Stir.
  3. Spread a layer of blue cheese dressing on a tortilla. If you want, you may use ranch dressing instead!
  4. Toss in the appropriate quantity of meat.
  5. Cheddar cheese is sprinkled on top.
  6. Serve immediately with celery and carrots on the side.
  7. Enjoy!
