Let’s face it, no one can keep the pounds off. They try, but can’t. It’s just not possible. This is the story of my weight loss journey, and my time as the fat girl. The journey started roughly 8 years ago when I decided I wanted to be a little healthier. I began a fad diet, which I lost a little weight, then gained some again. I continued this cycle about 6 more times. Each time I thought to myself “I will never let myself gain weight again” but it always happened. Then, I started to gain weight.
We have all found it hard to get in shape, and sometimes we just don’t have the time to spend hours in the gym doing our workouts. That’s why I created Shredded Buffalo Chicken Tacos. These tacos are full of lean proteins and vegetables that will keep you full and satisfied.
Once I made my first shredded buffalo chicken tacos, I was hooked. They are a perfect combination of savory and spicy with the perfect serving of creamy avocado and bright relish. Heat the chicken according to the package instructions.
Pour into a dish and shred with two forks once done.

On your tortilla, spread a layer of blue cheese dressing. If you want, you may use ranch dressing instead! Pile on as much meat as you like and top with strong cheddar cheese.

- 6 tortillas (flour)
- 1 cup Cheddar Cheese (Sharp)
- 1/2 cup blue cheese or ranch dressing
- Frank’s Buffalo Sauce (1/2-1 cup)
- Warm the chicken according to the package instructions.
- In a mixing dish, shred chicken and pour 1/2-1 cup Frank’s Buffalo Hot Sauce over it. Stir.
- Spread a layer of blue cheese dressing on a tortilla. If you want, you may use ranch dressing instead!
- Toss in the appropriate quantity of meat.
- Cheddar cheese is sprinkled on top.
- Serve immediately with celery and carrots on the side.
