The second time I conducted some research, I discovered that most people use velvetta, however velvetta is heavier in carbohydrates than I like. I ended up with cheddar as a result of this. Cheddar cheese is dependable, melts nicely, and tastes great! I also remembered that Monterey jack cheese has a mild taste and is popular in dips!
